Salmon with Philadelfia and Caremalized Onions En-croute



Beautifull en-croute, made with salmon and a topping of caramelized onions and Philadelphia cream cheese.



Recipe Ingredients: (enough for 4)
  • 1 skinless and boneless salmon fillet (I purchased it with skin and removed it after as is cheaper this way)
  • 1 packet of puff pastry (I purchased it already rolled, as I didn't want the trouble to make it myself)
  • 1 Large Onion (finely chopped)
  • 2 tomatoes sliced
  • 2 minced garlic cloves
  • 21/2 a shot of Port Wine
  • 2 Heaped soup spoons of Philadelphia Cream cheese (or similar)
  • 1 bunch of parsley (finely chopped)
  • a little salt, black pepper and virgin olive oil
  • 1 egg yolk to brush the pastry



In a frying pan put a little olive oil and once hot add (salt and pepper), onion and garlic. Let them cook until they caramelize well, when this happens add the port wine, cook for another minute, remove from heat and leave to cool.

After cooling add the two tablespoons of Philadelphia over the chopped parsley and stir until it becomes consistent. Place the fillets of raw fish over the pastry (add a little salt and pepper on top), spread fillets with cream cheese and onion, put on top of the slices of tomato.

Now lift the flaps of the pastry covers the fish but do not completely cover it, use the excess of the ends of the wrap to make the strips to put over, these will not let the dough open more when cooking (see photo). Press the edges with the teeth of a fork and brush the dough thoroughly with the egg yolk. insert it in the hot oven (200 degrees C) for 25 minutes, and is ready to serve.

The vegetables are just boiled, I used as you can see, round beans, carrots and potatoes. You can use the same or even cauliflower, broccoli etc. You can also quickly after boiling the vag sauté them for one minute with butter on a frying pan then sprinkle some chopped parsley and a little lemon juice.

For the sauce puts the milk in a saucepan with the nutmeg, butter plus a dash of salt and pepper. Once it boils, mix the wine with the flour premixed, and stir until it thickens, finally add the chopped parsley and is done, pour over the vegetables. Bon Appetite

Angel Hair Pasta with Salmon and Hake Soup



Recipe Ingredients: (eneugh for 4 people)
  • 4-5 "balls" of Angel Hair Pasta (about 200grs)
  • 150grs hake+ 150grs salmon (other fish can be chosen and use even more varieties) (cut the fish in small cubes)
  • 1 onion (finely chopped)
  • 1 carrot (finely chopped)
  • 1 garlic clove (finely chopped)
  • 1 piece of ginger (finely chopped)
  • 1 bunch of parsley "or coriander" (finely chopped)
  • 1/2 tomato pulp "passata"
  • 1 cube of chicken or fish stock (fish stock is better)
  • Salt, Black Pepper, paprika, chilli powder (a pinch of each)
  • Olive oil and water (sufficient)

I made the sauce in the Wok, putting there a little olive oil, that once it reached hot temp, I added the onion, carrot, garlic & ginger, letting these cook until golden (stirring occasionally), once they reached that stage I added the fish and stir it occasionally only by tossing avoiding using wooden spoon, continued tossing occasionally but letting the fish to cook for around 2-3 minutes, as the fish cooks quickly.

At this point I've added the a pinch of each condiment, salt, b. Pepper, paprika chilli powder as well as the tomato pulp plus 2 glasses of water and the Angel hair pasta which I crushed with my hands to become just small bits of pasta I also added the stock cube. Then I let this cook for around 5-7 minutes, finally I turned the heat off and added the chopped herb (parsley or coriander) also added a few mint leaves that not only improve the visual they improve flavour and help digestion, I also toasted a few bits of bread and made some croutons, for a lovely soup meal. Stuffed Ball Courgette with Pink Salmon covered in a Ginger and Mushroom Topping





I saw these courgettes for the first time in 24 years of living in the UK, and I was completely inspired by them so much so I had to buy them, I asked the owner of this little veg shop how often does she get them in, she replied is only the second time I have had them since I opened this shop. So I had to think of something really special for them....hope you like it.



Recipe Ingredients: (enough for 4)
  • 4 Skinless Pink Salmon Fillets
  • 4 medium or large Ball Courgettes (cut the top scoop the inside, and reserve this inside for cooking finely chopped).
  • 1/2 tin of fine Italian plum tomatoes (you can also use fresh tomatoes, 2)
  • 1 medium onion (finely chopped)
  • 1 handful of chopped almonds
  • 2 garlic cloves (minced)
  • 1 soup spoon of butter
  • 1 piece of ginger the size of a garlic clove (minced)
  • 1/2 cup of pearl barley flakes
  • 2 soup spoons of mozzarella cheese (grated)
  • 10 medium button mushrooms (cut into quarters) please don't use canned ones
  • salt and black pepper (to taste)
  • a little olive oil.

Preparation:

Is quite simple to make too. After you cut the lids of the ball courgettes, and remove their insides, place them in a pan covered in water and a little salt, cook these for around 20 minutes, careful not to overcook them as they get too soft to handle for the stuffing.

Meanwhile make the stuffing sauce, bear in mind you should have a little excess to go outside the stuffed ball to accompaign the lid as this one is edible too. Place a frying pan on the stove with a little olive oil, once hot add half of the chopped courgette (pulp) , one of the garlic cloves, the onion and a little seasoning (salt and black pepper), fry these stirring regularly. Once the onion reaches its semi-transparent stage add the 1/2 tin of tomatoes, and brig it to the boil again, then add the butter and as soon as this one melts the pearl barley flakes, mix occasionally until these are cooked through, if it gets too dry add a little water (just a little to keep it moist, as you want quite a thick consistency). Once cooked turn the fire off and add the mozzarella, giving it a stir so that it melts in.

Once cooked drain the courgettes from the water, stuff them with the barley filling all the way to the top, and then place these in a preheated oven to 200c for 15-20 minutes until golden brown on the top (see picture), the lids do not go in the oven you save these on the side.

Meanwhile, place a frying pan on the stove with a little olive oil and some seasoning (salt & pepper) and as soon as is hot add the salmon fillets they will cook through (depending on thickness) in about 3 minutes on each side, once they are 1 minute from being totally cooked add the remaining garlic, once fried remove them from the pan and set them aside, add to the pan the ginger, cook for around 1 minute then add the remaining courgette, the almonds and the mushrooms and if need be a couple of spoons of water, these will cook quick between 3-5 minutes, meanwhile the courgettes are done. Start serving and even with the oven just switched off put the fish in just to heat it a little, serving it last, so that all is hot (or do it your own way lol). Then plate as per picture or make your own arrangement as the eyes also eat. It was SUPER.



..when I invented this, I had not though of it being so nice...

Salmon Fetuccini (with an extra)

This is what you all have been waiting for, I need to warn you this is a very seriously delicious meal, and I beg you to make it for you and your family you will not be disappointed.

Actually being winter I am going to be doing a few pasta dishes to delight you all over the coming days!!!

Recipe Ingredients:
  • 1 & 1/2 glass of milk.
  • 100mls double cream.
  • 2 soup spoons butter.
  • 1/3 freshly ground nutmeg (if already in powder one third of a tea spoon).
  • 1/3 tea spoon of freshly ground black pepper.
  • 1 tea spoon of sea salt.
  • 1 measure of white port wine (red will do, or you can use half a glass of white wine).
  • 2 heaped soup spoons of plain flour dissolved in a glass of water.
  • 4 skinless and boneless wild salmon portions (frozen is best, but you can use fresh)
  • a bunch of parsley (finely chopped, equivalent to about 2 soup spoons full)
  • 400grs of egg fettuccine (to be cooked "al dente")
  • 200grs king prawns (other will do. I used frozen)
  • olive oil (see how much is enough)
This was so darn easy, I got inspired by a couple of photos at my local supermarket.
In a large pan put the salt, the milk, the butter, the black pepper and nutmeg, let this come to a boil, turn the fire down to a simmering and add the frozen salmon, make sure milk is boiling gently and after about 3 minutes turn the salmon around, and after another 3 again and again, this until the fish is completely cooked (poached, poaching from frozen I found to produce better fish flakes) once fish cooked take it out onto a plate. Now add the double cream to the milk and the port let it again come to the boil and slow it to simmering and add the prawns, if they already cooked just enough time to make sure they are heated through, if they from raw (which their colour is gray, wait till they turn bright orange and then about 2-3 more minutes.

While that is happening flake the salmon in the plate (make sure the pasta is cooking during this time as it will take about 12 minutes to be "al Dente"). Once the prawns are done raise the temperature and add the flaked fish in and pour half of the glass of water with flour in, always stirring, it will start very quickly start to get thicker, well you want the consistency of bechamel or thick gravy, if to liquid add a little more until it does, if too thick (which I will not believe will be, add a little more milk) once the right thickness add the parsley and turn the fire off, now drain the cooked fettuccine passing it through boiling water and add it to the sauce, mix it well and then dish it, I then dressed it with a little pure virgin olive oil, you can do the same is delicious if you get a very good olive oil, or you can sprinkle some Parmesan cheese on top or even crumb some Gorgonzola on the top of it ...it is really up to you...but this was the best meal I ever made...apart from the gigantic enchiladas I made some time ago on this blog. Multicolore Salmon Pasta

If you look above it already looks delicious, but you can give it a touch of luxury with very little money. I dedicate this dish to my niece Siobhan, she loves pasta dishes.


Recipe Ingredients:

  • 1 large onion (minced)
  • 2 garlic cloves (minced)
  • 250mls of single cream
  • 2 egg yolks
  • 10 large mushrooms (chopped roughly)
  • 1 bunch of parsley
  • 3 large pieces of salmon (cut into small cubes)
  • salt and pepper to taste
  • pinch of paprika (smoky sweet)
  • a shot of port
I done this in a wok (as better heat distribution), place a couple of olive oil spoons into the wok, let it get very hot (it starts smoking a bit) throw in the onion and the garlic, cook until translucent then throw in the salmon and the mushrooms, cook for about 3 minutes. Then add the port shot and the paprika pinch cook for a minute then add the cream saving a little in a glass to this you add two egg yolks and mix well than mix this in with the mains sauces to thicken it once velvety thick add the parsley finely chopped and serve it over your pasta, add one final parsley leaf on top for decorating and you done...very easy and quick.
For the pasta you choose the one you like best like fettuccine or tortellini whatever, just egg pasta or just spinach or even mixed like I chose, mine were egg, spinach and tomato pasta. Not only gives a lot of colour you get multilevelled tasting pasta. See finished dish bellow.

Hi my name is Rico (short for Ricardo) will regularly add more food content to this blog, all my recipes are tried and tested, as I make them and eat them as well as my family, so I wouldn't give you something that is not good.
