Delicious Mushrooms Stew with Chickpeas and Quorn




Recipe Ingredients: (enough for 4)

    * 1 pack of Quorn "pieces" (or soy) about 250 to 300grs
    * 200grs squash pumpkin (peeled and cut into cubes)
    * 1 can of chopped tomatoes (or fresh peeled tomatoes 400grs chopped)
    * 2 medium sweet potatoes (peeled and diced)
    * 2 red-skinned potatoes (peeled and diced)
    * 8 medium mushrooms (cut in quarters)
    * 1 can of beans (rinsed and drained)
    * 2 large carrots (peeled and cut into pieces)
    * 1 large onion (chopped)
    * A small turnip (peeled and cut in cubes)
    * 1 / 2 teaspoon turmeric
    * 1 red pepper (chopped)
    * 3 garlics (chopped)
    * A bunch of parsley (chopped, reserve some leafs for presentation)
    * Salt, pepper, and olive oil "sufficient"




How to prepare:

Place in a pan (on medium) a little olive oil + salt + pepper. Once hot, add the garlic, onion and carrot, stirring regularly until it starts going golden. At this stage add the can of chopped tomatoes, and as soon as they start to boil add the potatoes (both kinds), the turnip, pumpkin, beans, Quorn, turmeric and red pepper.

Place a lid not fully covered and cook covered over low heat for about a minimum 30 minutes, taste to see if this as you like and add to taste the salt pepper, as well as the mushrooms and cook another 4 minutes. Finally add the parsley and cook for another 1-2 minutes. 


Then you only need to serve and decorate the dish, when I tried this recipe I decided that it would be very good served with a nice  cold Rose Wine, or  a good sparkling white. Kisses and bon apetit! ...

Tagliatelli Mushrooms and Asparagus with Garlic Breads



Ingredients for the recipe:
  • 300grs tagliatelli egg pasta
  • 250mls fresh cream
  • 1 egg yolk
  • 2-3 tablespoons of grated cheddar cheese
  • 2 garlic cloves
  • 8 mushrooms
  • 10 asparagus
  • 1 cup self raising flour
  • 1 tablespoon of butter
  • salt and pepper and a little olive oil

In a small saucepan boil the asparagus for about 10-15 minutes, when cooked remove them from the water and throw them in a (hot) wok pan with the mushrooms cut in halves with the chopped garlic plus a little butter and olive oil , season them with a little salt and pepper.

Cook them for aprox 3-5 minutes stirring occasionally, then add the cream, continue until the cream comes to a boil, then next add the egg yolk diluted in about three tablespoons of milk and add the cheese also, continue stirring it until the sauce thickens (about 2-3 minutes). After which you just serve.

While making the sauce, boil the tagliatelli in some water for about 12 minutes, then drain it and drizzle a little olive oil so that the pasta doesn't stick together, finally serve it with the previously made sauce on top.

The breads I made as follows. In a bowl, mix the flour with a pinch of salt and a little Luke warm water, until it was mixing it until it forms a ball, after which you kneed it and stretch it for about 10 minutes, then make small balls and put them on a floured tray and covered these with a cloth for 20 minutes, on the side in a little bowl crush a garlic with a little oil, which you then brush over the balls before placing them in the oven for about 15-20 minutes until golden brown, then serve them with the tagliatelle. 

Real good food like this has to be made and eaten, especially as is a quick homemade delicious dish.

Beetroot Linguine with Courgette and Mushrooms



Recipe Ingredients: (enough for 4)
  • 400grs linguine pasta
  • 3 small cooked beetroot (finely chopped)
  • 1 courgette (finely chopped)
  • 2 garlic cloves (finely chopped)
  • 1 onion (finely chopped)
  • 12 mushrooms (cut in halves)
  • 2 soup spoons of fresh cream
  • 1 glass of semi skinned milk
  • 1 teaspoon of corn starch diluted in a little water
  • 2 soup spoons of grated cheddar cheese
  • some, salt black pepper and olive oil.



Place some water in a pan with a little salt and a drizzle of olive oil, once boiling insert the linguine there, letting this one cook for 12-14 minutes, once done (should be al dente), drain it and while draining pass through it some more fresh boiling water, to remove excess starch. Continue to drain it.

Meanwhile put a little olive olive oil in a wok (about 3 soup spoons full). once hot add the onion and garlic, once these start going blond, add the remaining vegetables (the beetroot, courgette, and mushrooms) let these cook well for around 7-10 minutes, adding a little water every time it feels a little dry and stirring occasionally.

After they are cooked, add the fresh cream at this stage and the milk, bring it to the boil, and as soon as it starts to boil add the corn starch diluted in the water, the cheese, and stir regularly allowing it to thicken, once thickened place the linguine inside and stir come more as to mix well the sauce with the pasta, serve it now while very hot, it is delicious.

The beetroot is lovely in this dish as it does not just add colour it adds flavour and texture, and creates a varied different levels of textures and flavours, the beetroot should remain slightly crunchy the mushrooms meaty and juicy and the courgettes soft and creamy. Also bothe the beetroot and the mushrooms give this dish an excellent earthy flavour which is mellowe by the silky cream of the fresh cream, milk and cheese. Bon Apetit!!

Stuffed Ball Courgette with Pink Salmon covered in a Ginger and Mushroom Topping





I saw these courgettes for the first time in 24 years of living in the UK, and I was completely inspired by them so much so I had to buy them, I asked the owner of this little veg shop how often does she get them in, she replied is only the second time I have had them since I opened this shop. So I had to think of something really special for them....hope you like it.



Recipe Ingredients: (enough for 4)
  • 4 Skinless Pink Salmon Fillets
  • 4 medium or large Ball Courgettes (cut the top scoop the inside, and reserve this inside for cooking finely chopped).
  • 1/2 tin of fine Italian plum tomatoes (you can also use fresh tomatoes, 2)
  • 1 medium onion (finely chopped)
  • 1 handful of chopped almonds
  • 2 garlic cloves (minced)
  • 1 soup spoon of butter
  • 1 piece of ginger the size of a garlic clove (minced)
  • 1/2 cup of pearl barley flakes
  • 2 soup spoons of mozzarella cheese (grated)
  • 10 medium button mushrooms (cut into quarters) please don't use canned ones
  • salt and black pepper (to taste)
  • a little olive oil.

Preparation:

Is quite simple to make too. After you cut the lids of the ball courgettes, and remove their insides, place them in a pan covered in water and a little salt, cook these for around 20 minutes, careful not to overcook them as they get too soft to handle for the stuffing.

Meanwhile make the stuffing sauce, bear in mind you should have a little excess to go outside the stuffed ball to accompaign the lid as this one is edible too. Place a frying pan on the stove with a little olive oil, once hot add half of the chopped courgette (pulp) , one of the garlic cloves, the onion and a little seasoning (salt and black pepper), fry these stirring regularly. Once the onion reaches its semi-transparent stage add the 1/2 tin of tomatoes, and brig it to the boil again, then add the butter and as soon as this one melts the pearl barley flakes, mix occasionally until these are cooked through, if it gets too dry add a little water (just a little to keep it moist, as you want quite a thick consistency). Once cooked turn the fire off and add the mozzarella, giving it a stir so that it melts in.

Once cooked drain the courgettes from the water, stuff them with the barley filling all the way to the top, and then place these in a preheated oven to 200c for 15-20 minutes until golden brown on the top (see picture), the lids do not go in the oven you save these on the side.

Meanwhile, place a frying pan on the stove with a little olive oil and some seasoning (salt & pepper) and as soon as is hot add the salmon fillets they will cook through (depending on thickness) in about 3 minutes on each side, once they are 1 minute from being totally cooked add the remaining garlic, once fried remove them from the pan and set them aside, add to the pan the ginger, cook for around 1 minute then add the remaining courgette, the almonds and the mushrooms and if need be a couple of spoons of water, these will cook quick between 3-5 minutes, meanwhile the courgettes are done. Start serving and even with the oven just switched off put the fish in just to heat it a little, serving it last, so that all is hot (or do it your own way lol). Then plate as per picture or make your own arrangement as the eyes also eat. It was SUPER.



..when I invented this, I had not though of it being so nice...

Courgette Risotto (vegetarian)



Recipe Ingredients: (enough for 4)
  • 400grs Risotto rice (American Long Grain will also work)
  • 1 courgette (sliced into little cubes)
  • 150grs Button Mushrooms (if bigger cut in halves) please do not use canned..not the same.
  • 1 large onion (finely diced)
  • 1 Garlic Clove (minced)
  • 1 Vegetable stock cube (Oxo is fine or Knorr)
  • 1 heaped soup spoon of chopped up parsley.
  • a little olive oil
  • 25-30grs butter
  • salt and freshly ground black pepper
  • 3 soup spoons of fresh single cream
  • (optional) shavings of cured parmesan cheese (optional extravagant) shavings of Truffle
Place a pan on the stove with enough olive oil to cover the bottom, once hot add the, onion, garlic, courgette and seasoning (salt and pepper), let them cook stirring it occasionally once the onion is semi-transparent add the rice, stirring it to be completely covered in the olive oil, let the rice cook around 3 minutes stirring frequently, this will make the rice thirsty and ready to start absorbing the stock, you make this by adding the stock cube to about 70dcl of warm water, making sure is well dissolved. So you add some stock just enough to cover the rice and continuously stir, as it dries add a little more stock and so on until it finishes,but when you have used 2/3 of the stock is time to add the mushrooms and the butter, and then continue the process as before.


The risotto requires that the rice is fully cooked but still firm in the grain interior, so don't be afraid test and taste it as you cook, you'll know when is right for you, it should never be overcooked and soft all the way through, once I almost finished cooking I added then the three spoons of fresh cream, and let it cook just one further minute then added the parsley and gave it one last stir, and served it. It is lovely to then put on top for both decoration and flavour the optional bits, just slithers of cured parmesan, or shavings of truffle, or both..hehe you decide how extravagant you wanna be.....It is also lovely with a nice medium dry ice cold white wine...have fun ..is easy and you don't need the optionals to be good... cheers!!!

Duo Pizza - Thin and Crispy (Italian Type)

Fiz estas pizas para o jantar no outro dia, ficaram uma delicia, já há muito tempo que não comia piza assim, sem estar oleosa e fofa, só fiz uma coisa que modificava, mas foi por preguiça. Nesta só me ti cheddar queijo, quando devia também ter posto mozarella, mas não estava com paciência para ir a loja, então podia ter ficado mais gostosa, mas também teria ficado mais calorifica. hehe O que se há de fazer?



Recipe Ingredients: (enough for 4 or two hungry ones)
  • 2 tall glasses of strong plain flour
  • 1 tall glass of water (+or-)
  • 1 glass grated cheddar
  • 1 glass of grated Mozarella (I didn't put this but is definitly better with it)
  • 1 glass of pitted black olives
  • 1 glass of mushrooms (thinly sliced)
  • 1 large onion very thinly sliced
  • 1/2 glass of tomato pulp (tempered with: a little salt and black pepper, a tea spoon of oregano, and a pinch of garlic granules)
  • 1 tea spoon of instant fast action east
  • salt
  • olive oil




Preparation:

A very simple and fast recipe to accomplish. In a bowl I placed the flour and the east, which I mixed well, then followed by a large pinch of salt and the water (preferably warm), mix it well in with your hand, until it comes away from the walls of the bowl, transfer it onto a floured table, and sprinkling more flour kneed it stretching it to break down the starch in the dough making it silky and smooth, do this for around 5 minutes. Split the dough into two balls, and roll them with a rolling pin to the size of the trays you wanna put them in, with a tissue rub some olive oil at the base of the tray and then place the dough there, and you cover it with some kitchen cloths (sprinkle a little coarse polenta so it doesn't stick to the cloth) place them in the oven (switched off) for around 30 minutes, to allow the dough to rise a little.

After that remove the trays from the oven, and turn the oven on to preheat to 180-200c.
Split the sauce between the two pizzas, making sure you leave off around 1cm from the edge, leaving the dough exposed there, so you get a nice crust. Then put half of the mix of mozarella and cheddar dividing by the two pizzas over the dough. Followed by the toppings, (half for each) olives, onions, mushrooms (i made one without mushrooms as one of my kids do not like e'm), then followed by the remaining mixed cheddar and mozarella, a sprinkle of oregano on top of each, and oven with them for around 18 minutes, until golden, then I served with a little mixed salad and balsamic vinaigrette.

Remember you put whatever topping you want, and that this is also great to use left overs, of cooked meat or fish etc... (or even use ham, pineapple etc). just cut them into chunks and on top they go. Very nice with a glass of nice light red wine, like a good Californian red.

Pork Loin Steaks with Garlic and Ginger Sauce, carrot and Garlic Mash and Enoki with Spring Onion Stir-fry



This so far has topped all of my meals in taste, how healthy it was and easy to prepare, even though looks complicated, was really easy. But I cannot put into words how nice it was. Bellow is a picture of a cooked Enoki mushroom, it has a fleshy texture and is very shroomy taste.



Recipe Ingredients: (enough for 2)
  • 2 large potatoes (pealed and cubed)
  • 6 medium carrots (pealed, 3 cut into pieces, 3 into halves)
  • 4 pork loin steaks
  • 1 piece of fresh ginger (the size of two garlic cloves, minced)
  • 2 large garlic cloves "more if small" (1 roughly minced, 1 cut into 3-4 pieces)
  • 1/2 packet of fresh Enoki mushrooms
  • 1 soup spoon of sesame seeds (I used a mixture of white and black, just white is fine)
  • 3 soup spoons of balsamic vinegar
  • 1 bunch of spring onions (sliced)
  • 1/2 cup of single cream
  • 1 soup spoon of butter
  • a pinch of nutmeg
  • a glug of milk
  • a little olive oil
  • some salt and pepper
  • and a pinch of saffron


Place a pan with boiling water on the stove, and in there put the potato, 1 chopped garlic and all the carrots, as well as a little salt, it will take around 15-20 minutes to be boiled depending on the quality of the potato.

While that is doing lets do the rest quick so that it all ends at the same time. Before all that I marinated the pork with two spoons of balsamic vinegar poured evenly over them, a little salt, the minced garlic and the minced ginger, just on one side of the pork, I let it marinade for around 30 minutes.

I used two frying pans one for the steak and sauce making the other for roasting the sesame seeds and making the spring onion and Enoki stir-fry. So put both frying pans on the stove, the larger one with olive oil the smaller one just dry. On the dry one place the sesame seeds inside, and as it heats keep shaking it to brown the sesame evenly on both sides, this also releases the most amazing nutty taste and smell of the sesame, once blonde place it in a container, awaiting to be cooked with the stir-fry, while on the larger pan with olive oil, once hot place the pork steaks with the garlic and ginger facing down, as this will make them stick to that side of the steak, let them cook for around 2-3 minutes and then turn them around for another 2-3 minutes which should be sufficiente to be totally cooked through, at this stage remove them from the pan scraping the garlic and ginger so that it stays in the pan, put the steaks on a plate and put them in the oven just to keep warm and to warm the plate at around 30-50c, while you do the rest.

Now both pans are off the fire, put back on the fire the little pan put a little olive oil in it and once hot add the spring onion, and as soon as it darkens (about 1 minute) add the Enoki, and a little seasoning (salt and pepper) + one spoon of balsamic vinegar and sesame seeds, stir fry for around 3 minutes and it's done, put the other frying pan on the fire and pour the fresh cream into it + the pinch of saffron, bring it to gently boil and this will thicken substantially, as soon as is thick remove from fire.

By now the potatoes and carrots should be done, drain and remove the halved carrots, the rest just mash it up, then add a spoon of butter, a glug of milk, a pinch of nutmeg and seasoning (salt and pepper). And that is done too, finally arrange it all on the plate and get ready for an explosion of flavours, like I said is unbelievable, how nice it all was.

The nutty flavours mixing in with the mild onion and the earthy mushrooms and the fabulous textures, then the mash with a hint of sweetness from the carrot and a little garlic and nutmeg coming through, and the "piece de resistance" the moist pork with a saffron ginger and garlic , well make it and you'll see.

Left Over Beef Stew



Well I made a small mistake on this one, not to be repeated, so I am owning up as to prove that everyone makes mistakes from time to time. I made this stew with red skin potatoes with the skin, thinking more flavour and more roughage but I ended up with quite rough red skins well noticeable in my velvety stew, I now know not to use skin on potatoes in stew unless using new potatoes where the skin is so thin that is bearably noticeable (especially when I used old potatoes).
Everything apart from the beef in this stew was old and nearly going off, but it turned out one of the best stews I made so far, I can only assume this being due to the vast variety of veg that went in, the beef was braising steak cut into pieces.

Recipe Ingredients: (enough for 4)
  • 400grs braising steak (diced)
  • 50grs pancetta (or smoked bacon)
  • 500grs red skin potatoes (cubed) please remove skin unless they are new potatoes
  • 1pkt mushrooms brown cap (halved and quartered depending on size)
  • 1 onion (diced)
  • 2 garlic cloves (minced) + a pinch of garlic powder
  • 6 spring onions (sliced)
  • 1 celery heart (sliced)
  • 3 carrots (sliced)
  • 1pkt mangetout (cut into three parts)
  • 1 pepper (diced)
  • 1 chilli (chopped) 1 a pinch of cayenne pepper
  • 1 tin plum tomatoes (chopped)
  • 2 spoons of tomato paste (diluted in half glass of water)
  • a pinch of paprika
  • salt and pepper to taste
  • olive oil to taste
Very simple to make so is short and sweet. Put a pan on the stove with a little olive oil, once hot add the garlic, onion, chillies, (both) pancetta, salt and black pepper. Let these cook until the onions and pancetta are starting to go golden add the beef and stirring it occasionally until is sealed (you know this as should go brown all around), then add chopped tomatoes, put a lid on and let it cook for around 40 minutes on lowest of heat, then add the tomato paste and all the rest of the stuff you have left celery, potato, carrots, pepper , spring onion, mangetout, mushroom and paprika. Put the lid back on and let this now cook for around 25 minutes. Optionally at the end you may add some flat leave parsley. And that is it ready to eat.

The mushrooms were crinkly, the celery limp, potatoes were starting to grow roots, carrots had whiskers, garlic little sprouts, mangetout limp and so on this was the state of my veg as if I didn't use it would go to be compost, I am glad I did use it as it made one of the best tasting meals I ever ate (well made by me) I am in no way suggesting you use veg like these you can use fresh veg I am sure the result will be the same or better, I am only asking that you think before you throw anything away...As there are millions of people in the world starving that would eat those thing that you, me would throw away, lets not then. Somked Hadock Filled Portabello Mushrooms Grattin

This was a very delicious meal I was fortunate to prepare. An invention no doubt, and like all inventions I was afraid of failure, but not the case, this was a success with the family.

Recipe Ingredients:(enough for 4)
  • 4 Portabello mushrooms (if not portabello large open ones will do)
  • 2 Bunches of broccolis spears (about 400grs)
  • 400grs mixed red and white new potatoes (cut in half)
  • 125grs fresh single cream
  • 2 soup spoons of Gruyère pieces (if not available, extra mature chedar will do"grated")
  • 2 soup spoons of mild cheddar (grated)
  • 1 glass of milk
  • 50grs butter
  • 1 big bunch of parsley (finely chopped)
  • 1/2 reb bell pepper (cut into little strips)
  • 4 garlic cloves (finely chopped)
  • 300grs smoked hake (no skin and chopped into small cubes)
  • 1/2 lemon juice
  • 1 pinch nutmeg
  • Olive oil
  • salt and pepper to taste





Put the potatoes cooking in a pan with a little salt, these will take about 15-20 minutes depending on their size. On another pan cook the broccoli spears, these will take between 7-10 minutes to be cooked so only start cooking these 10 minutes after you have put the potatoes on, once the broccoli is cooked just put a little butter in them (optional).

However before all that you need to prepare the mushrooms as these will take around 20 minutes in the oven (at 200c). So to prepare them drizzle a little olive oil in a large pirex dish to fit all mushrooms or 2 small ones, put the mushrooms upside down in the dish and previously remove the stalk, chopping them into small bits. Now season the mushroom with some salt and pepper, then top it with (dividing by the 4), 2 chopped garlic cloves, chopped mush stalk, the pepper (save a little to also decorate), half of the parsley and the smoked fish, finally the bechamel (see how to make this bechamel bellow) and on the top of the bechamel, the mild cheddar and the remaining pepper for decor.

For the bechamel you place in a little pan, the cream and the milk, let it get very hot at that stage add a little seasoning, salt pepper, a pinch of nutmeg and the Gruyère cheese. Once all melted get 1/3 of a glass with water and mix in a soup spoon of plain flour, once well mixed , pour it into the sauce and stir briskly and the sauce will thicken substantially, should be the consistency of runny mayonnaise.

Once the potatoes are cooked put them in a frying pan with the butter, remaining parsley and remaining garlic and fry them for 3 minutes adding the lemon juice at the end, plate it all up and you're done. Is super delicious I cannot tell you how much you need to make it and find out.

Potato and Mushroom Halloumi Grattin with Sticky Pork Ribs / Crumed Garlic Chicken / Fish Cake

Another simple yet effective recipe, very tasty indeed, if I may say so, and the accompaniment is so versatile that goes with many things, some of which I listed here, the rest is up to you. Above you can see the Potato and Mushroom Halloumi grattin, bellow are the sticky ribs YUM!!!



Recipe Ingredients: (grattin, feeds 4 people)
  • 1kg potato red skin (washed and thin sliced)
  • 1 large onion (finely chopped)
  • 300grs Large open mushrooms (sliced)
  • 200grs cheddar cheese (grated)
  • 200grs Halloumi cheese (thinly sliced , about 1/2 cm thickness)
  • 1/2 glass full fat milk
  • (optional) few bits of butter
  • 2 garlic cloves (minced)
  • salt pepper and olive oil (to taste)
Place a pan with boiling water on the stove, and put the sliced potatoes in, once it reaches boil again let them cook for 4 minutes. While that is doing you can pan fry with a little olive oil the mushrooms and 1 garlic clove (minced), and once that is that do the same to the onion and another garlic clove (minced).

You then assemble the dish for the oven, after draining the potatoes, one by one cover the bottom of a pirex dish, then scatter covering those potatoes with the onion, followed by the mushrooms. On top of those pour half of the milk you have in the glass evenly throughout the whole area, and then the grated cheddar, follow that by a little seasoning salt and pepper, and layer another section of potato slices using the remainder of the potato, once that is done pour the remaining milk evenly to cover all area and position the Halloumi to be well spread over al of the potatoes (see picture). Then goes in the oven for 30 minutes at 180c.




For the pork ribs, make sure when you buy these that they are quite meaty, but they also must have a little fat, as they helps with being tender when cooking.

Recipe Ingredients: (ribs enough for 2)
  • 400-500grs pork rib rack
  • 2 soup spoons of ketchup
  • 1 soup spoon of condiment of mustard (or American style mustard)
  • 1 tea spoon of smoked paprika
  • 1/2 tea spoon of chilli powder
  • 1 soup spoon of smoky BBQ sauce
  • 1/2 orange in juice
  • 1 soup spoon of denmerra sugar
Mix all the ingredients (apart from the pork rack...lol) to form a basting and sticky sauce. Brush it on both sides of the rack, once that is done place the rack in the oven at 180c for 30 minutes (so you see this will cook at same time as the potatoes), however set a timer every ten minutes of those thirty for you to brush more sauce on the rib rack, so you get to brush it 3 times in all and I want you to (by the last brushing) use all the sauce. that will make the ribs very nice tender and sticky, obviously tenderness of the ribs will also depend on the quality of pork. YUM!!




The chicken is just some rests I used to not go to spoil, basically I de-boned a couple of leg/thighs and took the skin off, tempered them with salt lemon and garlic, and let them marinate for 30 minutes before I started the whole coking. Then I pass them through flour (mixed with garlic granules and pepper), and some egg (mix) and finally through bread crumbs. And deep fried these until golden brown (see picture)



The fish also a rest of fish, weigh it and boiled the same weight of the fish in potatoes. So 50% fish 50% potato, mashed the potato and minced the fish, mix the two together, adding an egg yolk some seasoning and some parsley chopped, once well mixed I beat the egg with to peak and folded that into the mixture, formed some cakes pass these through flour, and then egg (mix), finally bread crumbs and deep fried, same as the chicken...well YUM!! again,,, you can top it up after fried with a little lemon juice, and some tartare sauce if you like... have fun...you can use many more left overs. If you ever have difficulties thinking what to do with left overs asked I might be able to help....lol

Sirloin Steak w/ Diane Sauce & easy Potato Gratin


Recipe Ingredients:
  • 1 good sirloin steak (28 days mature best)
  • 6 mushrooms (sliced)
  • 1 garlic clove
  • 1 measure of cognac (I used Courvoisier Cognac) Brandy will do too
  • 2 potatoes
  • 60grs grated cheese
  • 50mls fresh cream + 100mls fresh cream
  • 50mls fresh milk "whole"
  • salt and pepper to taste
  • and a glug of olive oil
Just put some salt and pepper on both sides of the steak and rub a little olive oil on each side too, let it absorb the flavour for 20-30minutes, then get a griddle pan on the fire and a frying pan too.
On the griddle once extremely hot, place the steak on the one side for about 2 minutes then on the other for another 2 minutes, then turn around again to another diagonal position 2 minutes and again turn to the other side 2 more minutes (all in all 8-10 minutes should suffice for a medium rare steak). While that is doing place a glug of olive oil in the frying pan and the garlic (minced) as soon as start to sizzle add the mushrooms tossing them regularly, once fully covered in oil pour the cognac (brandy) and tip forward the pan (thus flambéing the mushrooms) and the flame will go out by it self, continue to toss the mushrooms until cooked add then the 100mls cream and in a glass mix a tea spoon of plain flour and water, then add a little at he time to the cream until it gets to the consistency you want. And that's the sauce done, which should finish around the same time as the steak.

The potatoes, these you prepare as the steak marinades as they will take about 20 minutes to grattin. Prior to that peal them and slice them, parboil them till virtually cooked, than you place one layer of potato, mill a little pepper over them and a little salt, pour a little milk and cream over them and half of the grated cheese, another layer repeat the same...and to the oven it goes 200c 20 minutes more or less ...you know when they are ready as to the golden colour on top see picture.

A classic recipe made easy!!! Hope you like it.

Prawns and Cod - Fisherman Rico Style

This wasn't a very cheap diner overall, however if you do the account per person it is very cheap as you'd never eat this quality at the price per person. Total cost was around £10.00 and serves 4 people so is about £2.50 per person ... see.

Recipe Ingredients:
  • 1 onion (finely chopped)
  • 4 medium tomatoes (de seeded and skinless, roughly chopped)
  • 200grs button mushrooms
  • 5 spring onions (chopped)
  • 2 garlic cloves (minced)
  • 1 red pepper (finely but roughly chopped)
  • 500grs Cod (de boned and skinless, chopped into small cubes)
  • 250grs King Prawns fresh
  • 400grs rice (basmati)
  • 1 bunch parsley (chopped)
  • 3 bay leafs
  • 1/3 tea spoon of chilli powder
  • 4 soup spoons of olive oil + 2 of vegetable oil
  • a measure of Poitín (or Cognac) + 1 measure of Port wine
  • Salt and Pepper (to taste)
Another easy recipe to make, as always and very healthy. Put a pan on the stove and boil the rice, once the rice is boiled place it in a colander draining. While the rice is cooking you can start making the sauce, which is also very simple.

Place another pan on the stove (high) place the oils inside until very hot add then the onion, garlic, bay leafs, red pepper and the salt pepper. Let these ones cook until the onion is caramelized, at this point you add the chilli, tomatoes and button mushrooms, let these cook for another 5 minutes, and now add the tomatoes, fish, spring onions, Port and Poitín. Continuing to cook for a further 3 minutes now add the prawns cook for a further 2 minutes until they cooked through and finally the parsley (saving a little to decorate the dish). And you basically done.

Get the rice and pour boiling water over it, letting it drain again this will make it very loose and fluffy, create a bed of rice in each plate and put some sauce over it and decorate it (see picture).

Also alternatively you can add instead of Poitín and port just a full glass of red wine, that will work too.

Spaghetti Carbonara

Another pasta dish as promised, this time a classic, cheap and easy to do, OK is not the most healthy but certainly makes up for taste.


Recipe Ingredients:
  • 200grs mushrooms (sliced)
  • 150grs smoked bacon (strips sliced)
  • 1 garlic clove (minced)
  • 1 onion (very...very finely chopped)
  • 2 egg yolks
  • 200mls fresh single cream
  • 50grs Cheddar cheese (grated)
  • 2 soup spoons of parmesano cheese (grated)
  • 4soup spoons of olive oil
  • one measure of fire-water or vodka
  • 400-500grs spaghetti (or fettuccine or even linguine)
  • salt and pepper
  • (optional) decoration a bit of parsley
This is a very easy and simple recipe to make, so if you in a hurry this is what you do:
Put a skillet frying pan on the fire and a deep pan with water for the spaghetti, on the spaghetti pan add a little salt and a little vegetable oil (about one spoon full, this does two things: stops the water from foaming to much and helps the pasta not stick too much), once this reaches a boil add the spaghetti in (or the pasta of your preference).

In the skillet, place the olive oil until hot, then in goes the garlic, bacon and the onions, let them cook stirring occasionally until the start to caramelized, once this stage is reached add the mushrooms + a pinch of salt and pepper, once the mushrooms are virtually cooked throw in the fire-water (or vodka) lean the pan forward so that it catches the flame as soon as it does straighten it and shake it, the flame will burn all the alcohol in the booze and will flavour the contents, don't worry it will only burn for a few seconds.

At this stage add the fresh cream leave about 2 spoons of that fresh cream in a glass and mix with it the 2 egg yolks once the fresh cream on the pan starts to bubble add the egg yolks and the cheeses (both of them) the cream should thicken up to a nice consistency, turn the fire down and let it simmer for a little while about 2-3 minutes, the whole process will probably take 10-12 minutes in which the spaghetti is also cooked. So drain the spaghetti passing boiling water through once well drained dish it and serve some sauce over it, and if you want add a little chopped parsley on top and you're done ...all in all will take you about 15-20 minutes to prepare this meal and even less to eat it :)

Fettuccine al Fungi - spinach and egg fettuccine with mushrooms and cream

Please check this out a simple fantastic spinach and egg fettuccine al fungi.

Recipe Ingredients (feeds 4) :

  • 400grs fettuccine "verdi & Uovo" mix green and egg
  • 250grs mushrooms (I prefer brown organic, sliced)
  • 2 egg yolks
  • 2 soup spoons of brandy
  • a soup spoon full of parmisiano (parmesan) cheese (or similar)
  • 2 heaped soup spoons of grated cheddar cheese.
  • 1 soup spoon of chopped parsley
  • 1 half onion (chopped finely)
  • 1 garlic clove (minced)
  • 1 tea spoon sweet paprika
  • salt and black pepper to taste
  • 3 soup spoons of olive oil
  • 1 garlic clove (crunched)
  • 250mls fresh cream
Very simply put some water boiling and ad one glug of normal oil to the water + some salt and the crushed garlic clove, add then the fettuccine, and cook it for 7-10 minutes you want it "al dente" I mean cooked but still semi hard the pasta.

While that is doing, on a wok or large frying pan put in the olive oil, the garlic and the onion, cook these until very golden. Now add the paprika and cook for one minute more, then add the sliced mushrooms, once they are cooked which will take approx 3-4 minute add the brandy and leaning the pan at a 30-45 degree angle ignite the brandy (flanbéing it), this will give it a smoky flavour and also brandy although will contain no alcohol as it has been consumed by the flames, so is a safe food for kids too.

After that add the cream and let this heat up again until nearly boiling, dissolve the egg yolks with a little milk about 3-4 soup spoons full in a glass, pour this mixture into the cream always stirring this will start to thicken up the sauce then add the parmesan and the cheddar which will thicken up even more, both the sauce and the pasta will be done roughly at the same time.

So drain the pasta drizzle a little olive oil over it and toss it then serve (preheat the plates if need be if you ant it to stay hotter) and pour over the pasta a couple of servings spoons. To decorate it you can do either of these three: sprinkle some sweet paprika on top of the sauce or sprinkle a little chopped parsley on top and drizle in a circle a little extra virgin olive oil around the parsley but still on the sauce or sprinkle a little more parmesan cheese and freshly grind some black pepper over it too... they will all look quite impressive and add to the taste too.
