The Perfect Bangers and Mash with Onion Gravy


A very, very traditional British meal made luxurious and super delicious.

Recipe Ingredients:

  • 6 fresh sausages (minimum 65% pork shoulder, preferable)
  • 1 large onion (thinly sliced)
  • 4 large potatoes (pealed and cut into small cubes for fast cooking)
  • 2 heaped spoons of Gravy powder
  • 1 bunch of chopped parsley
  • 1 soup spoon of butter
  • 1/4 tea spoon of ground nutmeg
  • 1 small glass of milk
  • olive oil salt and pepper (sufficient)



Butterfly cut all the sausages (slice them down the middle without separating the halves). Then put a non stick frying pan on the stove at medium heat with a little olive oil. Once hot add the sliced onion and stir occasionally until it starts to get golden.

While that is happening put a pan on the stove with boiling water and place the cubed potatoes inside (+a little salt) and boil them till cooked.

On the frying pan now that the onions started to caramelize move the onion to one side and place the sausages split down first in the pan then cover them with the onions, and let them cook for about 3-4 minutes, after that turn them and let the onions fall under the sausages and cook for another 3-4 minutes stirring occasionally. This will allow the sausages to cook but more importantly will allow the onions to caramelize further.

Now the potatoes should be cooked so strain them and at the same times remove the sausages from the pan (dish them in pre heated plates to conserve them hot) leaving only the onions. Add to the onions a large glass of water with the gravy powder diluted in it, and bring it to the boil until the gravy thickens and infuses with the caramelized onions and sausage meat flavours from the pan.

While the gravy is making, mash the potatoes with the potato masher, once smooth add the butter + the parsley + the milk and nutmeg and mix well.

Than dish it all and eat this simple traditional yet super delicious meal. :)

Pork Loin Steaks with Garlic and Ginger Sauce, carrot and Garlic Mash and Enoki with Spring Onion Stir-fry



This so far has topped all of my meals in taste, how healthy it was and easy to prepare, even though looks complicated, was really easy. But I cannot put into words how nice it was. Bellow is a picture of a cooked Enoki mushroom, it has a fleshy texture and is very shroomy taste.



Recipe Ingredients: (enough for 2)
  • 2 large potatoes (pealed and cubed)
  • 6 medium carrots (pealed, 3 cut into pieces, 3 into halves)
  • 4 pork loin steaks
  • 1 piece of fresh ginger (the size of two garlic cloves, minced)
  • 2 large garlic cloves "more if small" (1 roughly minced, 1 cut into 3-4 pieces)
  • 1/2 packet of fresh Enoki mushrooms
  • 1 soup spoon of sesame seeds (I used a mixture of white and black, just white is fine)
  • 3 soup spoons of balsamic vinegar
  • 1 bunch of spring onions (sliced)
  • 1/2 cup of single cream
  • 1 soup spoon of butter
  • a pinch of nutmeg
  • a glug of milk
  • a little olive oil
  • some salt and pepper
  • and a pinch of saffron


Place a pan with boiling water on the stove, and in there put the potato, 1 chopped garlic and all the carrots, as well as a little salt, it will take around 15-20 minutes to be boiled depending on the quality of the potato.

While that is doing lets do the rest quick so that it all ends at the same time. Before all that I marinated the pork with two spoons of balsamic vinegar poured evenly over them, a little salt, the minced garlic and the minced ginger, just on one side of the pork, I let it marinade for around 30 minutes.

I used two frying pans one for the steak and sauce making the other for roasting the sesame seeds and making the spring onion and Enoki stir-fry. So put both frying pans on the stove, the larger one with olive oil the smaller one just dry. On the dry one place the sesame seeds inside, and as it heats keep shaking it to brown the sesame evenly on both sides, this also releases the most amazing nutty taste and smell of the sesame, once blonde place it in a container, awaiting to be cooked with the stir-fry, while on the larger pan with olive oil, once hot place the pork steaks with the garlic and ginger facing down, as this will make them stick to that side of the steak, let them cook for around 2-3 minutes and then turn them around for another 2-3 minutes which should be sufficiente to be totally cooked through, at this stage remove them from the pan scraping the garlic and ginger so that it stays in the pan, put the steaks on a plate and put them in the oven just to keep warm and to warm the plate at around 30-50c, while you do the rest.

Now both pans are off the fire, put back on the fire the little pan put a little olive oil in it and once hot add the spring onion, and as soon as it darkens (about 1 minute) add the Enoki, and a little seasoning (salt and pepper) + one spoon of balsamic vinegar and sesame seeds, stir fry for around 3 minutes and it's done, put the other frying pan on the fire and pour the fresh cream into it + the pinch of saffron, bring it to gently boil and this will thicken substantially, as soon as is thick remove from fire.

By now the potatoes and carrots should be done, drain and remove the halved carrots, the rest just mash it up, then add a spoon of butter, a glug of milk, a pinch of nutmeg and seasoning (salt and pepper). And that is done too, finally arrange it all on the plate and get ready for an explosion of flavours, like I said is unbelievable, how nice it all was.

The nutty flavours mixing in with the mild onion and the earthy mushrooms and the fabulous textures, then the mash with a hint of sweetness from the carrot and a little garlic and nutmeg coming through, and the "piece de resistance" the moist pork with a saffron ginger and garlic , well make it and you'll see.

Easter Duck & Orange with Carrot Rice



Everyone knows duck and orange really combine well, but add some garlic and some carrot rice, and the plate explodes with colour and taste.



Recipe Ingredients: (enough for 2, "x 2 for 4 people")
  • 250grs basmati rice
  • 2 duck legs (with skin and bones)
  • 2 large garlic cloves (1 finely sliced, 1 minced)
  • 1 large carrot (grated)
  • 1/2 onion
  • 3 oranges (pealed and sliced)
  • salt and pepper + some olive oil.



Another way too easy recipe to make, put a frying pan on the stove with a little olive oil, once hot add the sliced garlic and a little salt and pepper, and the duck legs which you previously scored (a few cuts through the skin, which helps release the duck fat), brown the legs on both sides also as soon as the garlic starts to brown remove it to a little dish.

Now use two sliced oranges, and lay on the bottom of a small pyrex with a drizzle of olive oil, season them and place the duck over them and juice one of the slices over the duck also add the browned garlic, cover with a little foil and place in the oven @ 180c for 40 minutes and then remove foil increase heat to 200c for a further 10 minutes, during which you can make the rice.

For the rice put a pan with boiling water on the stove, and season it salt and pepper and it will be done in 10-12 minutes, while that is doing let's make the carrot sauce. on the same frying pan where you browned the duck use this fat still and heat it, once hot add the minced garlic and onion, let these brown and once browned add the carrot grated, stir occasionally and as it get dry add a little water, fry a little more it gets a little dry add a little water, you repeat the process around three times, on the third and last time don't let it dry as it needs to be moist. Drain the rice and while draining it pass also some boiling water through it, and once completely drained add it to the sauce, season it and stir-fry it, once well combined and hot, arrange in on the plate with the duck and add the last sliced orange which serves both as decoration as well as a palate cleanser., also the orange coked in the pyrex mash it with a fork as it will combine with the garlic and some of the duck fat it is delicious when you eat it with the rice. Have fun, this is a delicious dish for Easter.

Left Over Beef Stew



Well I made a small mistake on this one, not to be repeated, so I am owning up as to prove that everyone makes mistakes from time to time. I made this stew with red skin potatoes with the skin, thinking more flavour and more roughage but I ended up with quite rough red skins well noticeable in my velvety stew, I now know not to use skin on potatoes in stew unless using new potatoes where the skin is so thin that is bearably noticeable (especially when I used old potatoes).
Everything apart from the beef in this stew was old and nearly going off, but it turned out one of the best stews I made so far, I can only assume this being due to the vast variety of veg that went in, the beef was braising steak cut into pieces.

Recipe Ingredients: (enough for 4)
  • 400grs braising steak (diced)
  • 50grs pancetta (or smoked bacon)
  • 500grs red skin potatoes (cubed) please remove skin unless they are new potatoes
  • 1pkt mushrooms brown cap (halved and quartered depending on size)
  • 1 onion (diced)
  • 2 garlic cloves (minced) + a pinch of garlic powder
  • 6 spring onions (sliced)
  • 1 celery heart (sliced)
  • 3 carrots (sliced)
  • 1pkt mangetout (cut into three parts)
  • 1 pepper (diced)
  • 1 chilli (chopped) 1 a pinch of cayenne pepper
  • 1 tin plum tomatoes (chopped)
  • 2 spoons of tomato paste (diluted in half glass of water)
  • a pinch of paprika
  • salt and pepper to taste
  • olive oil to taste
Very simple to make so is short and sweet. Put a pan on the stove with a little olive oil, once hot add the garlic, onion, chillies, (both) pancetta, salt and black pepper. Let these cook until the onions and pancetta are starting to go golden add the beef and stirring it occasionally until is sealed (you know this as should go brown all around), then add chopped tomatoes, put a lid on and let it cook for around 40 minutes on lowest of heat, then add the tomato paste and all the rest of the stuff you have left celery, potato, carrots, pepper , spring onion, mangetout, mushroom and paprika. Put the lid back on and let this now cook for around 25 minutes. Optionally at the end you may add some flat leave parsley. And that is it ready to eat.

The mushrooms were crinkly, the celery limp, potatoes were starting to grow roots, carrots had whiskers, garlic little sprouts, mangetout limp and so on this was the state of my veg as if I didn't use it would go to be compost, I am glad I did use it as it made one of the best tasting meals I ever ate (well made by me) I am in no way suggesting you use veg like these you can use fresh veg I am sure the result will be the same or better, I am only asking that you think before you throw anything away...As there are millions of people in the world starving that would eat those thing that you, me would throw away, lets not then. Spaghetti Bolognese with Pancetta and Chorizo



Recipe Ingredients: (enough for 4)
  • 500grs minced meat (beef)
  • 400grs spaghetti
  • 40grs Pancetta (or smoked bacon)
  • 20grs chorizo (diced)
  • 1 onion (finely diced)
  • 3 garlic cloves (finely diced)
  • 1 plum tomato tin (finely diced) best if "Italian"
  • 1 soup spoon of tomato concentrate (diluted in 1/2 glass of water)
  • 1 chicken stock cube
  • enough olive oil
  • bunch of coriander
  • enough salt and black pepper
Put on the stove a frying pan with a little olive oil, once well hot add the onion, the garlic and cook these well until golden, and at this stage add the pancetta and chorizo fry them for a further 3 minutes stirring always, follow it them with the addition of the minced beef, and still stirring it this time occasionally cook until all of the beef is browned, at which stage you now add the tomatoes both plum and concentrate, once it gets to boiling point reduce the flame to minimum and let it cook for about 20-30 minutes.

Eleven minutes before the sauce is ready, place a pan of boiling water with little salt and vegetable oil (like 2 soup spoons), stick the spaghetti inside and this will be ready in 11 minutes should still be a little "al Dente" as it should, as is delicious if it offers a little resistance when you bite it, drain it in a colander pouring boiling water over it to remove the starch still draining it. Serve and eat is delicious, and very simple.

Chorizo Flower Thighs served on a Chive Mash and a Smooth Spicy Cheese and Tomato Sauce



Another invented by me, and with this one both the eyes and the stomach can eat it.



Ingredients for Recipe: (for the 3 people)
  • 3 chicken thighs (boneless and skinless)
  • 1 bunch of chives (half diced, half just strips) "see photo"
  • 1 piece of chorizo the length of the chicken thigh (chopped into strips)
  • 1 can of peeled tomatoes (cut in pieces)
  • 1 / 2 cup of milk + 1 cup of milk (for purée)
  • 2 garlic cloves, (1 cut into strips for the thighs, 1 thin sliced for tomato sauce)
  • 3 tablespoon of cheddar cheese (cut into small cubes)
  • 1 tablespoon of butter for the mash + 1 more
  • 1 flat teaspoon of chilli powder
  • 6 large potatoes (peeled and cut into cubes)
  • 1 pinch of nutmeg
  • some coriander leaves.
  • salt and black pepper (to taste)
  • optional if you want the thighs also spicy, 1 red chilli (sliced thin into strips without seeds or veins)
It's easy to prepare. After removing the bones and skin (optional). Extend the thigh on a tray (or similar) and on the thicker part of it, with a sharp knife cut a flap to elongate the thigh further, (see photo) and put over some salt, ground black pepper, chorizo strips, chives, chilli strips of (optional) and garlic strips. Wrap the thighs so that they look as intact thighs, stick a couple of criss cross toothpicks to avoid them open when you cook them.

Let them rest half an hour helps helps them to gain taste, put a little olive oil in a frying pan and once hot put the salt and pepper well as the thighs frying, seal and make the thigh golden brown turning them around until the whole thigh is golden, pour contents of the skillet (frying pan) into a pan and pour in also the can of tomatoes and the remaining garlic garlic. Once it boils, turn down the heat and let it cook for about 5 minutes, add the chilli powder and turn the thighs around , and let it cook 5 more minutes. Now remove the thighs from the sauce and cut them into slices, and put the butter (1 tablespoon) milk and cheese cubes into the sauce, , , once incorporated it makes a very creamy sauce.

Of course at the same time do the potatoes. Put the potato cubes in a pan with boiling water and they will take about 10 minutes to be cooked, once they are cooked and drained and mash them. In a milk pan put, a glass of milk warming up with a tablespoon full of butter, and once hot so that the butter is melted pour it into the mashed potatoes also adding the salt, ground black pepper, chopped chives and a of pinch of nutmeg, stir well dish it and put the slices of chicken on top and the sauce around. Don't forget the coriander leaves as these are not just decoration, eaten with the sauce gives it a special taste.

Pan Fried Pork Sausage in a bed of Spring Onion Bulgar dusted with Paprika



Really easy to make yet nutritious and fast to accomplish.

Recipe Ingredients: (enough for 3-4 people)
  • 300grs bulgar wheat
  • 2 garlic cloves (1 finely diced, the other crushed)
  • 2 carrots (julienned)
  • 6 spring onions (thinly sliced)
  • 1 soup spoon of tomato concentrate
  • 1 bay leaf
  • some olive oil
  • a little butter
  • Salt, pepper and (sweet) paprika to taste
Cook the Bulgar (I used fine one this time) as you would cook rice it will be done in 7-8 minutes, and once cooked drain it in a small holes strainer, and set it aside. Meanwhile get a frying pan with a glug of olive oil and a little butter (heaped tea spoon will do) and as soon as is hot add the garlic the bay leaf and the sausages, following this method seal turn, seal turn keep doing that until is sealed all the way around, then you do the same for browning, browned turn and so on.

And while that is doing, on another frying pan put a glug of olive oil and the minced garlic soon as it get hot add a little seasoning and the carrots and spring onions, cook until the spring onions start to go a little darker, at this stage add some paprika and a soup spoon of tomato concentrate and 1/2 cup of water, bring to the boil reduce the heat to minimum and let it simmer for about 10 minutes, then join the sauce to the drained bulgar and let it rest about 3 minutes with a lid on....serve and eat. this was my yesterday's diner. Herbed Pancakes and Mini Spring Burgers with a tuft of Salad (Pancake day Gastro Feast)


Pancake day gastro feast... Only had a small dinner as had some more sweet pancakes to come after as desert...this was really enjoyable.

Recipe Ingredients: (good for 3-4 people)
  • 1small glass of self raising flour
  • 2 eggs
  • 1 tea spoon of baking powder
  • 2/3 of a glass with milk
  • 3 soup spoons of olive oil
  • 1 bunch of parsley (chopped)
  • 1/4 tea spoon of garlic granules
  • 400grs lean beef mince
  • 3 spring onions (thinly sliced)
  • 1 small onion (sliced)
  • one bag of mixed salad
  • 1 hand full of bread crumbs
  • 2 garlic cloves (minced)
  • 1/3 tea spoon paprika
  • 1 soup spoon of smoked barbecue sauce
  • also some barbecue and ketchup sauce to top burgers
  • salt and pepper to taste




With so many ingredients sounds difficult...No? Well it is not.
Dead easy, pour the flour in a bowl and the baking powder, whisk well together, then make a well and in the middle put 1 egg, oil, garlic granules, salt and pepper and start to mix, as it gets thicker add the milk a little a the time and continue mixing it in until all the milk is used up (it should be the consistency of thick bechamel, so add more milk if needed). Lastly add the parsley and set it aside to rest.

In another bowl place the mince, and add: bread crumbs, 1 egg, barbecue sauce, spring onions (save a little for decorating), garlic "minced", paprika and salt + pepper (to taste). Mix it all in with your hands, and after make balls the size of golf balls, which then you squash to make the mini burgers, these are grilled in a hot griddle pan, and the pancake mix is made in a non stick frying pan (no oil needed as these already contain oil) two soup spoons per pancake should be the right size, make sure they are cooked on both sides.

Serve the burgers over the savoury pancakes, squeeze a dollop of BBQ sauce and Ketchup over each burger and add a little spring onions to decorate as well as normal sliced onions (you can also use mini tomato slices, cucumber etc. " i didn't have any in" lol) put also a tuft of mixed leaves salad in each plate and drizzle some olive oil balsamic vinegar and refined salt. there you are a nice little healthy pancake meal for your pancake day.!!!

Liver and Onions "classic" with Fresh cream and Spring Onion Mash

Recipe Ingredients: (enough for 2)
  • 1 large onion (thinly sliced)
  • 2 garlic cloves (thinly sliced)
  • 2 bay leaves (cut in half)
  • 1 glass of white wine
  • 300grs ox liver
  • 4 large potatoes (pealed and quartered)
  • 4 spring onions (thinly chopped)
  • 100mls single cream
  • 1 soup spoon of butter
  • a pinch of nutmeg powder (or grate a little)
  • salt and pepper to taste (also a little milk if you find mash too thick)
  • a glug of olive oil
I am aware you all may know this recipe already as is a classic, but I am sure some people do not.
Peal and quarter the four large potatoes, put them in a pan with water, place it on the stove on high, once reaches boil reduce it to min, and let it boil gently, should take about 15-20 minutes till fully cooked. Once cooked drain the potatoes, place them in a bowl and mash them, once that is done add the butter, fold it in till it melts and mixes well, then add the fresh cream (salt and pepper to taste) nutmeg and spring onions, fold it in again and the mash is done ...simple hey!!!

As to the liver you should start cooking this after you put the potatoes boiling so all comes out at the same time, but about an hour prior to cooking the liver you should have it marinading in a bowl with the wine garlic and a little salt. Put a pan on the stove on high with a good glug of olive oil.

Once it gets very hot add the onions and a little salt and pepper, keep stirring and allow the onions to caramelize a little, once that happens shift them to one side and add the liver slices one by one, and as soon as it seals turn them over, as soon as it seals on that side too, add the marinade liquid to the pan mix it all in with the livers, once it starts boiling the livers will release a little blood which will help to thicken the lovely sauce, be sure not to cook them for too long about 3-4 minutes after sealed should be sufficient as they should be pink in the middle (that is quite safe) and this way they will remain soft and tender.


If you prefer well cooked, so be it but be aware that the livers will be a lot harder consistency, the secret to softness is to me medium cooked, still pink in the middle, arrange it on the plate with plenty of sauce and some onions on top as well as some mash, which you can dip into the sauce and have fun...

Lemon Chicken with Lemon Sauce - Blueberry Cottage Cheese Cakes

Recipe Ingredients: (feeds 4-5)
  • 4 medium chicken breasts (each breast cut length ways to for two steaks)
  • 2 lemons (one of which is to be cut in slices) *
  • 2 soup spoons of butter
  • 1 glass of white wine
  • 2 garlic cloves (minced)
  • 2 bay leaves
  • salt and pepper to taste
  • a little olive oil
  • parsley bunch (finely chopped)
After you made the chicken breasts into steaks, put them marinating in "vinha de alhos" roughly translates to Garlic Winery, which means you cut a couple of garlic into slithers, put them in the chicken in a bowl fill it with half white wine until it just covers the chicken, and add the juice of one lemon plus a couple of bay leaves and a little salt(these ingredients are not part of the recipes list, so these are extra), let these marinate for minimum 30 minutes best if over an hour.

Now place a pan on the stove on high, put a couple of glugs of olive oil enough to cover the bottom of the pan, once hot add the chicken steaks one by one, and turn them around as soon as they sealed, at that stages ad the remaining contents of the marinading bowl, also add the juice of one lemon, cut the remaining into slithers and throw it in also and add on as well the garlic, lemon slices, the butter, white wine, bay leaves + salt and pepper to taste, bring these to the boil, then ad a lid to the pan and reduce it to min. Let it simmer for 30 minutes, stir occasionally, and check if it does get low on liquid (it shouldn't) add a little more White wine.

*(tip this chicken will get quite zesty and lemony, if you don't want that zesty after taste (a little bitter) just remove the yellow part of the skin of the lemon before you juice it and/or cut into slices and ad it to the food. One more thing if you want the slices of lemon to remain more intact, only add these 10 minutes before it is all done)*

Now that the 30 minutes passed add a tea spoon of flour to a little water mix well than pour it in the pan as well as the parsley, swirl it around and that will form the nicest lemony wine sauce, really great, and if you not afraid of you stomach lol add a little cream (optional, for a more smooth cream).

Serve the chickens steaks on the plates top them with a little sauce, and place a slice or two of lemon from the sauce on top. Serve with that your roasted/boiled vegetables, mine were roasted potatoes, parsnips, butter steamed red cabbage, and some boiled Brussels Sprouts with garlic butter.




Recipe Ingredients: (enough for 6 ramekins)
  • 300grs Cottage cheese.
  • 150grs self raising flour
  • 1 large egg (separate yolk to one side, white to other and beat the with to peak)
  • 250grs blueberries (any other berries will do: strawberry, raspberry etc etc)
  • 6 spoons of sugar (2 to one side) (4 to another side)
  • a little water and lemon juice.
  • 200ml whipping cream


On a little pan you put the 2 soup spoons of sugar, 2 soup spoons of water and the fruit. Take this to the stove high temp and let it start to boil, once it reaches boiling point reduce it to minimum temp, and let it simmer until the fruit is cooked about 3-4 minutes, mash it with a potato masher let it cook for a further 2-3 minutes (if it starts getting to dry add a little more water) you want a consistency of runny jam.

For the cake, in a bowl put the cheese, egg yolk, 4 soup spoons of sugar and two thirds of the fruit jam, mix this very very well, once that is done mix in the flour bit by bit fold it in, it will get quite tough and sticky, so now add the beaten egg white and fold this one in too, now you should have a more caky mixture, spoon it into ramekins (that have been previously greased and floured) up to two thirds full, them add a tea spoon of the fruit mix into the centre of the dough, now add one more soup spoon of the dough to completely cover the jam you just put in and goes in the oven at 200c for 20 minutes depending on oven so check at 15. You want a golden brown top see picture. Once cooked let it cool down a little and serve it warm topped with icing sugar a dollop of whipped cream and the remaining jam add a little lemon juice heat it up and pour a spoon over the cake and cream see picture,,,,,is delicious....have fun!!!

Continental Pork Meatballs & Cranberry Sauce Panini

This was an excellent sandwich I made, is a classic in some places but nothing like a home made one. With all home made.

Recipe ingredients:
  • Pork mince 300grs
  • 2 garlic clove minced
  • 1 hand full bread crumbs (I just grate old dried baguettes)
  • 1 egg
  • 1 tea spoon of smoked paprika
  • salt and pepper (to taste)
  • some fresh panini's (I used Morrison's, they great 5 for £1.00)
  • 150grms cranberry's
  • one soup spoon of sugar
  • a squeeze of lemon
  • some olive oil
In a bowl mix in the pork mince, the garlic, egg, paprika, salt and pepper (to taste), once is all very well mixed make little balls. put a frying pan on the stove with some oil once very hot add the meat balls and keep swirling occasionally until the balls are all sealed, to better retain flavour. Once that happens, let them cook about 3 minutes on each side, so 3 minutes and turn and three minutes more, take them out to a plate with some absorbent paper to takes excess fat.

On a little non stick milk pan or similar size put the cranberries a soup spoon of sugar and a soup spoon of water + a little lemon squeeze, cook them for four to five minutes then mash them with a masher and cook for a couple minutes more until is quite thick, but you don't want jam, so don't cook much longer than that if is still too liquid don't worry the bread will absorb some juice will just make it nicer. Cut the panini's in half (see picture) cut the balls in half fill the panini place some cranberry sauce on top and their ready to eat, this is a delicious and fast snack. really really nice with some latte. When you doing the cranberry sauce if you want to add some more mystery add a couple of thinly sliced mint leaves...yum yum !!! Hope you really enjoy this one.....

Lamb Fillet with Paprika Potatoes and Grilled Halloumi Cheese



Recipe Ingredients:

  • 10 Small potatoes with skin (cut into quarters)
  • 2 Garlic cloves (minced)
  • 6 sliced of halloumi cheese about 1/2cm thick
  • 1 Lamb fillet (about 300grs, marinated in salt, pepper, garlic and lemon juice..for 20-30mins)
  • 300grs mushrooms (cut into quarter, I used mixed brown and white for greater flavour)
  • 1 parsley bunch (finely chopped)
  • 1 soup spoon of butter
  • a little olive oil
  • 1 tea spoon of paprika
  • salt and pepper to taste
  • a little lemon juice



Place a pan with water and salt on the stove, once boiling add the quartered potatoes and let these cook until they are about 3 minutes from being fully cooked (is intentional that I am not giving you times as cooking times vary depending on potato quality and time, you should know the potatoes you use cooking times). Once that happens remove them from the stove and drain them and place them in a bowl, adding to them salt pepper a drizzle of olive oil 1 garlic minced and the paprika, toss the potatoes in the bowl (not using instrument, only by moving bowl as you want potatoes to remain whole), and once they are all covered you place these in a tray and in a pre-heated oven to 200c for about 25 minutes.

Now place a frying pan with a glug of olive oil on the stove and once very hot, place the lamb fillet within. The idea is to seal and brown off all the way around the fillet, once this is achieved you set the meat aside and let it rest, until there is only about 15 minutes till the potatoes are done, once that happens, place the fillet in a Pyrex and insert it in the oven as well.

Five minutes away from what is in the oven being cooked, place the same pan you used for the meat, on the stove add a little more olive oil, the butter , and the remaining garlic (minced) a little seasoning salt and pepper, and the mushrooms, as it get hot with the pan start tossing the mushroom, regularly until they are 1 minute away from fully cooked (as they take about 5 minutes in all) at this stage add the parsley turn the fire off and toss them a few times. And as you can see all is done at the same time.

While someone serves, you should have a hot griddle, and a little pepper and lemon drops over each halloumi cheese, the griddle must be non stick (don't have one use a non stick pan or frying pan) put a drizzle of olive oil and grill the cheese for about 1 &1/2 minute on each side, and then plate it ...see picture.

This meal also goes well, if you want to replace the meat , with for example home made fish cakes..you decide.. bom apetite!!!

Pan Fried Pork Rib Steak with Apple and Mustard Sauce + Sauteed Rosemary Potatoes

I invented this one at the last minute, as I had some pork chops that were just about to run out of date, and some old Granny Smith apples getting very crinkly.



S i decided to use these as main ingredient, I also peeked in the fridge and found a jar with just a little of mustard with mustard seeds, and the idea started to emerge in my head. I encountered some old potatoes and ping ... the idea was complete.



Recipe Ingredients: (feeds two, double for four)

  • 1 Granny Smith apple
  • 2 rib pork chops
  • 8 small new potatoes (thinly sliced)
  • 1 garlic clove (minced)
  • 1/2 garlic granules
  • 1/4 of a glass of full fat milk
  • 1 soup spoon of butter
  • 1 soups spoon of mustard
  • salt and pepper (to taste)
  • a pinch of fresh or dried rosemary
  • a glug of olive oil


Place a large frying pan on the stove on high, and pour a glug of olive oil into it once hot add the potatoes sprinkle over them some salt, rosemary and garlic granules let them get golden on one side then turn them around, and let this side achieve the same golden colour. Once done remove them from the pan and put them drying on a plate with some tissue to drain the excess fat.

Add another glug of olive oil and now add the pork that you'd previously marinated with some salt, pepper and the minced garlic (for a minimum of half hour) which should start sizzling straight away also on the other half of the pan put the apple (previously pealed and sliced) spread it so it cooks evenly (see picture). Make sure to turn the pork immediately once sealed on one side so that the other side gets sealed too preventing the juices and flavour from escaping from the pork. The pour will cook quite quick as you want it slightly pink in the middle (no blood though) the whole thing takes about 5-7 minutes, also turn the apples once they start caramelizing, the juice from them will help flavour the pork too.

Finally remove the pork and arrange it on the plate with the potatoes, and on the pan add the butter first let it melt then add the milk and the mustard, which will thicken it to a sauce consistency, very quickly, place this over the pork and there you are a perfect meal.

****Note I used whole grain mustard, which I didn't like too much as leaves a little too much vinegary taste to it, so I would suggest using just English mustard. (your choice though*****

Pan Fried Chicken Fillets w/ Butter Sauce and Spring Onions



Recipe Ingredients:

  • 400grs chicken boneless and skinless mini fillets
  • the juice of 1/2 lemon
  • 1 garlic clove
  • 1/3 glass white wine
  • 400grs spaghetti (100% durum wheat)
  • 3 spring onions sliced
  • 1/3 glass milk
  • 2 soup spoons of butter
  • salt and black pepper to taste
  • a little olive oil
  • 1 heaped tea spoon of plain flour dissolve in water
Way easy and quick, and very...very cheap. Boil the spaghetti as normal it will take about 12 minutes to be cooked.

While that is doing, put a large frying pan on the stove on high temp, add a couple of glugs of oil, and once hot add the chicken fillets (previously seasoned with garlic, the lemon juice, salt and pepper and left to marinade for 1/2 hour).

They'll immediately start to sizzle, and therefore require turning around fairly quickly to seal the meat (the reason why is important to seal is that the meat becomes this way more juicy and moist as if the outside is sealed the moisture and juices inside will escape at a much slower pace), once sealed cook well on both sides until it goes a golden colour (see photo) once that happens on both sides it is done remove them and let them rest only time enough to make the sauce.

For which you deglaze the pan, which means you pull out the stuck to the pan chicken stock by pouring the wine in and rubbing it around with a wooden spoon, which will make the wine go a brownish colour, at this stage add the butter and as soon as it all melts add the milk and the dissolved flour, this will thicken the butter cream, ready to pour over the edges of the pasta and chicken (see photo) finally you put the sliced spring onions over the edges of the pasta and chicken, this is not only a good garnish it also provides an excellent flavour and texture once mixed in with the sauce, pasta and meat while eating. bon apetit...

Meat Balls in a Creamy Coriander Sauce and Oven Fries ( better than Ikea's)

This one was inspired in the Ikea's Swedish Meatballs.



Recipe Ingredients:

  • 400grs beef (minced)
  • 2 garlic cloves (minced)
  • 1 handful of breadcrumbs (you can use old dried brad just grate it)
  • 1 whole egg
  • half a tumbler glass of cream
  • half a tumbler glass of whole milk
  • 1 stock cube of chicken (I used Oxo easier to dilute)
  • 1 large onion (halved and sliced)
  • 1 little bunch of coriander
  • 1 little bunch of parsley
  • 8 medium potatoes (pealed and chipped)
  • some olive oil
  • salt and pepper to taste
  • 1 soup spoon of gravy (don't worry if you do not have it as some plain flour and water will do)



Throw the chipped potatoes in a pan with water, and par-cook the chips, then place them in a tray and brush them with olive oil and cook them at 200c, occasionally turning them around.

While that is doing, put the minced meat in a bowl, and put there also the parsley finely chopped,, 1 minced garlic clove, a pinch of black pepper and a pinch of salt, the bread crumbs and the egg. With your hands mix it all very well and shape pieces of the meat into balls, and set these aside.

now put a pan on the stove (on high) and pour in a couple of olive oil glugs, once very hot add the sliced onions, and the remaining garlic clove (minced) cook until the onions start to go semitransparent, at this stage add the meat balls and occasionally shake the pan so that the balls turn over and seal.

Once sealed add the gravy and chicken stock cube mixed in a glass of water also adding the cream and the milk, (if still to thick add more milk, if too thin a little more gravy diluted in a little water) + a pinch of salt and a pinch of black pepper to taste. And about one minute from finishing cooking add the chopped coriander. Is as easy as that, with the chips now ready is just serve and eat... (notice I didn't say how long the chips take, this is because it varies from oven to oven from potato quality to potato quality and even for how long they've been parboiled) But roughly about 20-25 minutes.

Sirloin Steak w/ Diane Sauce & easy Potato Gratin


Recipe Ingredients:
  • 1 good sirloin steak (28 days mature best)
  • 6 mushrooms (sliced)
  • 1 garlic clove
  • 1 measure of cognac (I used Courvoisier Cognac) Brandy will do too
  • 2 potatoes
  • 60grs grated cheese
  • 50mls fresh cream + 100mls fresh cream
  • 50mls fresh milk "whole"
  • salt and pepper to taste
  • and a glug of olive oil
Just put some salt and pepper on both sides of the steak and rub a little olive oil on each side too, let it absorb the flavour for 20-30minutes, then get a griddle pan on the fire and a frying pan too.
On the griddle once extremely hot, place the steak on the one side for about 2 minutes then on the other for another 2 minutes, then turn around again to another diagonal position 2 minutes and again turn to the other side 2 more minutes (all in all 8-10 minutes should suffice for a medium rare steak). While that is doing place a glug of olive oil in the frying pan and the garlic (minced) as soon as start to sizzle add the mushrooms tossing them regularly, once fully covered in oil pour the cognac (brandy) and tip forward the pan (thus flambéing the mushrooms) and the flame will go out by it self, continue to toss the mushrooms until cooked add then the 100mls cream and in a glass mix a tea spoon of plain flour and water, then add a little at he time to the cream until it gets to the consistency you want. And that's the sauce done, which should finish around the same time as the steak.

The potatoes, these you prepare as the steak marinades as they will take about 20 minutes to grattin. Prior to that peal them and slice them, parboil them till virtually cooked, than you place one layer of potato, mill a little pepper over them and a little salt, pour a little milk and cream over them and half of the grated cheese, another layer repeat the same...and to the oven it goes 200c 20 minutes more or less ...you know when they are ready as to the golden colour on top see picture.

A classic recipe made easy!!! Hope you like it.

Enchiladas My Way Chicken and Vegetarian

Above you can see the enchiladas i made the small dish is the Vegetarian the large one is the Chicken, this was an easy and cheap recipe to satisfy two different food requirements here in my house, which means you can indeed make this very versatile recipe in either vegetarian version, meat or both like I did.

For this I used....

Recipe Ingredients:

  • 1 pack of plain tortilla wraps (or you can make your own)
  • 1 large pepper (cut into thin strips)
  • 1 large onion (cut into thin strips)
  • 2 garlic cloves (minced)
  • 1 hot chili thinly sliced
  • 1 can of kidney beans
  • 1 can of tomatoes
  • a tea spoon of cumin
  • a soup spoon of oregano
  • 2 medium or 3 small chicken breast slice into thin strips (for the meat ones)
  • 250grs of Quorn mince (for the vegetarian ones)
  • Bechamel sauce (I always make mine but you can buy made if you want)
  • 2 large spoons of tomato concentrate (diluted in water to form a thick cream)
  • 2 large tomato paste (to add to sauces)
  • salt and pepper to taste
Very very easy to make in a wok pour some olive oil, place on the stove until very hot, add then the 1/2 pepper, 1/2 onion, 1/2 garlic, salt and pepper and 1/2 cumin and half of the sliced chilli, cook until the onion browns a bit and then add the oregano and the chicken, always stirring make sure the chicken strips are well sealed, once sealed then add the 1/2 tomato tin and one large spoon of tomato paste.

Let this cook for about 7 minutes, then assemble the Enchiladas: Put a row of filling about one third from the edge on top of that a couple of spoons of bechamel, wrap the soft tortilla around the sauce and lay it in the tray to go in the oven repeat process until the tray is full. Then on top spread some more bechamel sauce and put a line of tomato cream along each roll then sprinkle some oregano and grated cheese, than goes in the oven for about 20-25 minutes gas 200c, until golden brown on top, then serve with some grated carrot and some sliced spring onion or a salad of your choice.

For the vegetarian one exactly same thing just replace the chicken with vegetarian mince (Quorn).

I make the Bechamel sauce as follows: put some milk in a pan add a knob of butter some salt and some pepper (black freshly milled) the also a little nutmeg, once nearly boiling put a couple of spoons of plain flour in a glass and add water til about half of the glass, with a little whisk, mix it well until there are no lumps, pour it all into the hot milk and whisk constantly until thickens up, don't worry if not to thick yet as now you add a hand full of grated cheese, continue to whisk and you should get the most perfect bechamel (the milk you use should be about half a pint 250-300 mils. *tip if to thick add a little more milk while stirring, and if to liquid add a little more flour mixed in water*

Pork Sticky Rib Rack with Courgette Bulgar




I was really hungry for a nice piece of meat but also wanted to balance it out with some veg, so I combined two very different things that ended up complimenting each other perfectly. Sticky pork ribs and vegetarian courgette Bulgar.

Recipe Ingredients:

  • Bulgar
  • 1 large onion
  • 1 large yellow pepper
  • 300grs Bulgar
  • 1 large carrot
  • 1 large courgette
  • 2 spoons of tomato paste (with half glass of water)
  • 1/2 can of tomato (chopped)
  • 1 garlic clove
  • 2 bay leafs
  • some olive oil
Meat
  • 1 full pork rib rack
  • 2 spoons of Maple syrup
  • 1 tea spoon of chili powder
  • 1 tea spoon of smoky paprika (or normal is you prefer)
  • salt and pepper to taste
  • 2 soup spoons of sesame seeds
  • a pinch of garlic granules (or a fresh minced garlic)
Preparation:
I started with the pork rack in a cup mix the: syrup, chili powder, salt, pepper, paprika, and garlic. With your fingers rub it on thickly on the rib rack on both sides, then use the sesame seeds and sprinkle them on both sides too.... Stick the rack on a tray on a metal rack so that it cooks well on both sides, gas mark 200c for about 40-60 minutes depending how crispy you want it.

While that is doing let's do the Bulgar.
In a pan with boiling water add a glug of oil some salt and pour the Bulgar in, it will take about 10-15 minutes to cook depending how coarse you buy your Bulgar, while that is doing you prepare the veg, peel and slice the carrots, dice the courgette the onion yellow pepper and mince the garlic, put a wok or a large pan on the stove and add a couple of glugs of olive oil, once hot add the onion, garlic, pepper and the bay leafs.

Cook until onion starts to brown, at this stage add the carrots and the courgettes + the 1/2 can of tomatoes and the tomato paste and water, also some salt and pepper to taste.
Let this cook for 20 minutes and once is done, in a colander rinse the Bulgar with boiling water drain well and pour it into the sauce, giving it a good stir to mix well, cover the pan with a lid and let it rest for about 5 minutes more (no cooking now just resting) so that the flavours can be absorbed by the Bulgar.
serve it all together and I guarantee you a great meal.
