Super Light Chocolate Mousse



Ingredients:
  • 1 egg (separated 1white, 1 yolk)
  • 300mls whipping cream
  • 75grs 60% cocoa dark chocolate
  • 1 soup spoon of butter
  • 1 handful of sliced almonds (dry roasted in a pan)
  • 1 tea spoon of vanilla essence
  • 2 (flat) soup spoons of icing sugar
  • 1 soup spoon of cream




In two separate bowls whisk the egg white on one and the cream on the other, half way through to peaking add a (flat) soup spoon of icing sugar to each whip and continue to whip them till very firm.


Place a small pan with a little water and over that place a small glass bowl put the chocolate there into squares and keep stirring until this one melts completely, now add the spoon of butter, and once this one melts add the vanilla essence and the egg yolk mixed with one soup spoon of cream. Keep stirring for about 30 secs to 1 minute this will go into a rich smooth silky and glossy chocolate sauce, remove the bowl from the water and let it cool or pour it into a cold bowl to cool faster.

Add the egg white to the whipped cream and in a folding action mix the two, then add the chocolate, and again with a folding action mix it in. Then pour into ramekins top it with grated chocolate and roasted flaked almonds refrigerate for an hour or more and eat....enjoy the lightest and most rich & delicious chocolate mousse ever. Almond filled Sponge Cake (was Anniversary Cake for my Twins on the 16May)







Ingredients: (for the cake)
  • 200g butter
  • 200g self raising flour
  • 200g sugar
  • 4 eggs
Preparation:
Mix the butter (soft) with the sugar, mixing it well with the mixer (or hand mixer)for enough time for the mixture to become a whitish cream, at this stage mix the eggs in a little at the time until they are all blended with the mixture, as you want this cream to be as airy as possible. Next is the flour, but this one you can fold in using maybe a spatula, as you want to preserve all that air you knocked in with the mixer, divide this cream into two pre-greased and floured baking tins, and goes in the oven at 180c for 20 minutes (do the toothpick check) just to ensure they are well cooked, let them cool a little then remove them from the baking tin and place them on a cooling rack.



Ingredients: (for the filling)
  • 50g caster sugar
  • 15g corn starch
  • 2g salt
  • 235ml milk
  • 30g grated almond
  • 2 eggs
  • 2 tea spoons of almond essence
  • 1 Vodka lid
Preparation:

Mix all the dry ingredients well, place all the wet ingredients in a small pan (minus the Vodka), now add all the dry ingredients to the wet ones in the pan, and put it on a medium heat and whisk it continuously as soon as it starts to thicken up reduce the heat to nearly minimum, otherwise will thicken too quick and will get lumpy, you want a smooth cream. After is thickened and will thicken no more cook for a further 2 minutes, then remove from the heat, add the vodka let it cool completely before using it you can even refrigerate.
(this almond cream is also excellent for profiteroles, croissants and much more)











Ingredients: (cake topping)
  • 1 glass of double cream
  • 3 soup spoons of powdered sugar
  • 1 tea spoon of vanilla essence
  • 1 hand full of hand chopped almonds (with the skin preferable)
Preparation:

Whip the double cream to make the whip, once whipping is about half way through add the vanilla essence and when is two thirds from being done add then 1 soup spoon of the powdered sugar and when is completed add the other 2 soup spoons of powdered sugar whisk a little more just enough to mix it and it is done to cover the cake.
Cover the cake with the aid of a spatula and then spread the hand chopped almonds over it.


Knife chopped almonds ...yum!!

Cake assembly:

decide which disc is going to be the base then level it by cutting it's top (see picture), this will aid in the filling adhering better and soaking in a little, also securing better the other disc.
So you then assemble it as follows, after cutting the base spread the filling around one centimetre thick all over the base, then place the second disc on top, then cover the whole cake with the whip and spread the almonds on top, the refrigerate at least half an hour before serving, more time even better, absolutely lovely with a nice strong coffee, there is something magical when coffee and almond flavours meet in your mouth.

Stuffed Ball Courgette with Pink Salmon covered in a Ginger and Mushroom Topping





I saw these courgettes for the first time in 24 years of living in the UK, and I was completely inspired by them so much so I had to buy them, I asked the owner of this little veg shop how often does she get them in, she replied is only the second time I have had them since I opened this shop. So I had to think of something really special for them....hope you like it.



Recipe Ingredients: (enough for 4)
  • 4 Skinless Pink Salmon Fillets
  • 4 medium or large Ball Courgettes (cut the top scoop the inside, and reserve this inside for cooking finely chopped).
  • 1/2 tin of fine Italian plum tomatoes (you can also use fresh tomatoes, 2)
  • 1 medium onion (finely chopped)
  • 1 handful of chopped almonds
  • 2 garlic cloves (minced)
  • 1 soup spoon of butter
  • 1 piece of ginger the size of a garlic clove (minced)
  • 1/2 cup of pearl barley flakes
  • 2 soup spoons of mozzarella cheese (grated)
  • 10 medium button mushrooms (cut into quarters) please don't use canned ones
  • salt and black pepper (to taste)
  • a little olive oil.

Preparation:

Is quite simple to make too. After you cut the lids of the ball courgettes, and remove their insides, place them in a pan covered in water and a little salt, cook these for around 20 minutes, careful not to overcook them as they get too soft to handle for the stuffing.

Meanwhile make the stuffing sauce, bear in mind you should have a little excess to go outside the stuffed ball to accompaign the lid as this one is edible too. Place a frying pan on the stove with a little olive oil, once hot add half of the chopped courgette (pulp) , one of the garlic cloves, the onion and a little seasoning (salt and black pepper), fry these stirring regularly. Once the onion reaches its semi-transparent stage add the 1/2 tin of tomatoes, and brig it to the boil again, then add the butter and as soon as this one melts the pearl barley flakes, mix occasionally until these are cooked through, if it gets too dry add a little water (just a little to keep it moist, as you want quite a thick consistency). Once cooked turn the fire off and add the mozzarella, giving it a stir so that it melts in.

Once cooked drain the courgettes from the water, stuff them with the barley filling all the way to the top, and then place these in a preheated oven to 200c for 15-20 minutes until golden brown on the top (see picture), the lids do not go in the oven you save these on the side.

Meanwhile, place a frying pan on the stove with a little olive oil and some seasoning (salt & pepper) and as soon as is hot add the salmon fillets they will cook through (depending on thickness) in about 3 minutes on each side, once they are 1 minute from being totally cooked add the remaining garlic, once fried remove them from the pan and set them aside, add to the pan the ginger, cook for around 1 minute then add the remaining courgette, the almonds and the mushrooms and if need be a couple of spoons of water, these will cook quick between 3-5 minutes, meanwhile the courgettes are done. Start serving and even with the oven just switched off put the fish in just to heat it a little, serving it last, so that all is hot (or do it your own way lol). Then plate as per picture or make your own arrangement as the eyes also eat. It was SUPER.



..when I invented this, I had not though of it being so nice...

Rich Tea Biscuit Cake witth Almond



Ingredients for the Recipe: ( enough for many :D )
  • 4 yolks
  • 125 g butter
  • 125 g Fine sugar (Caster fine sugar)
  • 125 g Icing sugar
  • 40 g ground almonds (I ground my own for a more intense flavour)
  • 1/2 almond essence
  • +/- 2 packets McVities Rich Tea biscuits (or Maria biscuits)
  • 1 cup strong coffee (just warm nearly cold)
  • 10 flaked almonds (I flaked my own with my Santuku knife)



In a bowl place the yolks, butter (soft or into little cubes), sugars, and the almond essence, blend these very well with a mixer, until it forms a whitish cream, once it gets to that point add the almond while still mixing , mix these very well until all the ground almond is all blended in. Then refrigerate it for about an hour so it hardens to a thick cream consistency.

Then get the biscuits and one by one dip them in the (almost cold) coffee for about 3 seconds each, don't leave them too long or they will become soft and break apart, and also if too soft is impossible to spread the cream. Arrange them on a plate or tray one in the centre and six surrounding the centre one, then apply a thin layer of cream (that you had refrigerated), repeat the process until the cake is around 5-6 biscuits high, and finally cover the whole of the cake outside in the same cream, and sprinkle the almond flakes on top, them refrigerate until very cold and firm.

It is very nice served with a nice strong cup of coffee. I believe the original recipe doesn't have almonds at all and the walls and top of the cake is decorated with dessicated coconut shavings.
We all know that almond goes extremely well with coffee, as a lot of times when out for a coffee you get a little almond biscuit with it, therefore the reason why I used it.

Cod Spinach "En Croute" with (Yasai Katsu style) Curry Sauce & Rice

This was my main meal for my birthday, all freshly made by "mois", cod with spinach and Charlotte "en croute" with an Asian twist and also a celery rice and chunky curry sauce.
I have to put two recipes here as the rice and fish are two separate things combined hare in this dish, however the rice can be eaten on it's own as a recipe or with items such a grilled chicken breast marinated in garam masala, or grilled fish and many other things....same applies to the fish as it can be accompanied by potato parsnip mash incorporated with a couple of tea spoons of mustard with mustard sees, and so on.

Fish recipe ingredients: (feeds 10)
  • 10 fresh cod fillets (portions)
  • 2 garlic cloves (minced)
  • 8 Charlotte's (finely chopped)
  • 2 hands full of spinach leaves about 100grs (roughly chopped)
  • 2 hands full of bread crumbs about 50grs
  • 2 soup spoons of chopped almonds
  • one hand full of almonds with skin (finely chopped)
  • 2 soup spoons of olive oil
  • 2 large (mild) finely chopped chillies (previously de-seeded and de-veined)
  • 1 tea spoon of cumin
  • 1 tea spoon of turmeric
  • 2 soup spoons of port wine
  • 1/2 lemon juice
Lay the fish in non stick oven trays, then sprinkle them with a little pepper, salt, paprika and lemon juice, and leave them to marinade. While that is happening place a wok or frying pan on the stove and put the oil inside once very hot add the onions and the garlic, cook these until golden brown stirring occasionally. Once that is achieved add the cumin, turmeric, almonds and chopped chillies cook for a further 3 minutes, lastly add the spinach, and cook this until the spinach is reduced (should be about 2 minutes more.

I a bowl place your bread crumbs and add then the mixture to the crumbs to for a paste, if too dry you can always add a little melted butter. Lay this paste over each of the fish to completely cover the top, and they are ready to go in the oven (gas 200c) place a foil leaf over the fish over the first 10 minutes and take it off over the last 5 minutes, all together 15 minutes should suffice to cook well the fish.


The accompanying rice and curry sauce (as promised) has been inspired by one of Wagamamas dishes Yasai Katsu Curry, menu item number 72.

Recipe Ingredients: (for 6 people)

  • 2 garlic cloves (minced)
  • 1/2 courgette (finely diced)
  • 1 chilli (finely sliced, de-seeded and de-veined)
  • 8 Charlotte onions (finely diced)
  • 1 soup spoon of mild (or medium) curry powder
  • 1 tea spoons of cumin
  • 4 sticks of celery heart (finely diced)
  • 4 soup spoons of olive oil
  • 1 soup spoon of turmeric
  • 1 glass of water
  • 2 spoons of plain flour
  • pick some of the celery leaves and a garlic clove (to be cooked with the rice)
  • 500grs rice (basmati)
Place a pot with water on the stove and some salt, once boiling add the celery leaves and 1 garlic clove sliced + 500grs rice. Cook this until done (about 10-12 minutes). Rinse in boiling water and drain...but while rice is cooking do the sauce.

For the sauce place a wok or large deep frying pan on the stove with the olive oil in, once very hot add the Charlotte, garlic, chilli, cumin, curry and celery cook these for about 7-10 minutes. Then add the courgette and the turmeric and cook for a further 5 minutes. Separately mix about 2 full soup spoons of plain flour and a full glass of water, pour this into the frying veg and will make a thick curry sauce.. if too thick add more water if too thin mix a little more flour and water and add it slowly to thicken sauce further.

Serve rice (oval shape) and pour about 1 & 1/2 serving spoons over the rice to cover it all (see picture) as a serving idea.

Chocolate and Almond Mousse with Port

Every year (normally) I have my family around for my birthday. As my birthday is so close to xmas (27th) I ask them to come along and I celebrate by cooking for them something made by me entirely, so no peeking is aloud (into other peoples recipes), I can take past experiences in restaurants and cafés, and come up with my own thing.

So this birthday I decided to spoil them a little, well I do that every year... So I made for main course a Cod Fillet "en croute" with an Asian twist (Indian) and a plain rice portion with a special hot curried sauce (this inspired by Wagamamas, just the rice not the fish), and for desert I made a dark chocolate and almond mousse with an almond and port digestive base.



But on this post I will only provide you with the desert recipe, as I'll do another posting with the main meal, to make things simple. This desert was enough for 10 people.

Recipe Ingredients:

  • 2 250mls double cream pots (one for the almond one for the chocolate)
  • 8 chocolate squares ( dark chocolate cocoa from 30% to 50%)
  • 9 Mcvites digestives (other brand will do)
  • 2 soup spoons of Port Wine
  • 1 + 1 teaspoons of almond essence
  • 1 hand full of almonds (about 50grs) with the skin (chopped)
  • 2 soup spoons of denmerra sugar
  • 1 + 1 + 1 soup spoon of butter
  • some white sugar
In a bowl crush all the digestives add one (full) spoon of butter, half of the almonds (chopped) a tea spoon of white sugar, one tea spoon of almond essence and the port, mix this very well and should be enough to place one soup spoon of this mixture into each one of the 10 ramekins, after doing that press mixture down with a flat object I used the bottom of a small glass.

On two separate bowls pour each of the creams and whip them until they are Chantilly, but remember to half way before that happens to add a tea spoon of sugar to each cream part, set them aside for a little while, while you do the flavouring.

Put two little pans on the stove one with a little water and a bowl inside that (bain Marie) inside the bowl put the 8 pieces of chocolate once hot enough the chocolate will become very soft, add now one soup spoon of butter mix well it starts to go harder and darker, remove bowl from heat and add one egg yolk and mix well, pour this mixture into one of the bowls of whipped cream and fold gently, once well mixed set it aside.

On the other pan, put a (full soup) spoon of butter, and the remaining almonds, let them sizzle for about 3 minutes them add the denmerra sugar and and a soup spoon or two of water, let this continue to boil until is near caramelized but not caramelized as such. Let this cool briefly than pour it into the second bowl of whipped cream but not directly into the cream, let it cool a little more, than fold int into the cream adding also a tea spoon of almond essence.

Spoon both types of cream into the ramekins two have two halves each colour (see picture), then decorate top, i did the chocolate side with chocolate shavings, and the almond part with a little more chopped almonds and refrigerated these for 30 minutes.

It was a great success with the guests. You can also use instead of port amaretto (almond liquor) I did not try but I bet would be nice too.

Rico Almond and Coconut Biscuits

One other day I made a spaghetti carbonara my own recipe ,and used 3 egg yolks to achieve a velvety cream, I was however left with 3 egg whites, I know I already made a cake here on the blog to use egg whites ...well this is one more way of using them and is so easy I beg you all to make them really, maybe with some alteration add some dried figs or anything they are great (I invented them today) with other left overs I had in the cupboard.

Picture on the left shows them still in the tray after cooking on the non stick Teflon, which is a great idea for cookies/biscuits, especially if they have no "grease" as this ones take no butter oils or margarine's..nothing....





Recipe Ingredients:

  • 100grs ground almonds
  • 100grs rice flour (fine)
  • 50grs coconut (dessicated)
  • 4 spoons of self raising flour
  • 1 tea spoon of baking powder
  • 3 egg whites
  • 250grs of sugar
  • (optional lemon zest and or vanilla essence)
  • some whole almonds with skin.
  • a little of thick granulated brown sugar
Preparation:

This is soooooo easy you must really make and please spread the word on my blog address to others I am making all this economical and good recipes but so little views I am finding it frustrating that not many people are benefiting from them.

Here it goes, in a bowl mix the egg whites with the sugar beat it so hard that it becomes a very dense white cream, then throw in all the dried stuff all well mixed, fold it in with a spatula until homogeneous, then with two spoons shape each biscuit and put them on a tray preferably with a Teflon sheet, if not grease it and flour it, or anything else you do for them not to stick. Place and almond in the center of each and some brown granulated sugar on top, bake in the oven (180c) for 17-20 minutes depending on the oven, take them out let them cool and eat them all without sharing them .....lol....just joking share them with your loved ones ...and maybe send me some too :)

Hi my name is Rico (short for Ricardo) will regularly add more food content to this blog, all my recipes are tried and tested, as I make them and eat them as well as my family, so I wouldn't give you something that is not good.
