Nut Free Salad Pesto Pasta with a Pan Fried Cod Loin





Easiest and fairly healthy meal. Recipe Ingredients:
  • 400grs fresh pasta (I used spirals)
  • 250grs packet of three leaves salad (mine was, spinach, rocket and water cress)
  • 3 garlic cloves (minced)
  • 1/2 red bell pepper
  • 1/2 red chilli
  • some olive oil
  • 1 juice of whole lemon
  • 4 fresh cod loins
  • salt and pepper to taste
In a frying pan put a little olive oil and two of the minced garlic cook for 1 minute add the salad, and toss it quickly when it goes limp and darker in colour pour it all into a jug and add 3 glugs of olive oil, the lemon juice the bell pepper and chilli, blitz it all with the blender. Meanwhile cook the pasta in boiling water with a little salt and a little vegetable oil, it takes around 15 minutes to cook once cooked add the pesto, you made. Also on the pan you sautéed the salad add a little more olive oil the remaining garlic a little salt and pepper, and the cod loins you can squeeze a little lemon juice over them if you want it will take around three minutes on each side to cook completely depending on thickness, and is all done ...check the times and plan how and when to cook things so that all finishes at the same time, this is a lovely light and fast meal yet very filling and colourful. cheers!!















Chorizo Flower Thighs served on a Chive Mash and a Smooth Spicy Cheese and Tomato Sauce



Another invented by me, and with this one both the eyes and the stomach can eat it.



Ingredients for Recipe: (for the 3 people)
  • 3 chicken thighs (boneless and skinless)
  • 1 bunch of chives (half diced, half just strips) "see photo"
  • 1 piece of chorizo the length of the chicken thigh (chopped into strips)
  • 1 can of peeled tomatoes (cut in pieces)
  • 1 / 2 cup of milk + 1 cup of milk (for purée)
  • 2 garlic cloves, (1 cut into strips for the thighs, 1 thin sliced for tomato sauce)
  • 3 tablespoon of cheddar cheese (cut into small cubes)
  • 1 tablespoon of butter for the mash + 1 more
  • 1 flat teaspoon of chilli powder
  • 6 large potatoes (peeled and cut into cubes)
  • 1 pinch of nutmeg
  • some coriander leaves.
  • salt and black pepper (to taste)
  • optional if you want the thighs also spicy, 1 red chilli (sliced thin into strips without seeds or veins)
It's easy to prepare. After removing the bones and skin (optional). Extend the thigh on a tray (or similar) and on the thicker part of it, with a sharp knife cut a flap to elongate the thigh further, (see photo) and put over some salt, ground black pepper, chorizo strips, chives, chilli strips of (optional) and garlic strips. Wrap the thighs so that they look as intact thighs, stick a couple of criss cross toothpicks to avoid them open when you cook them.

Let them rest half an hour helps helps them to gain taste, put a little olive oil in a frying pan and once hot put the salt and pepper well as the thighs frying, seal and make the thigh golden brown turning them around until the whole thigh is golden, pour contents of the skillet (frying pan) into a pan and pour in also the can of tomatoes and the remaining garlic garlic. Once it boils, turn down the heat and let it cook for about 5 minutes, add the chilli powder and turn the thighs around , and let it cook 5 more minutes. Now remove the thighs from the sauce and cut them into slices, and put the butter (1 tablespoon) milk and cheese cubes into the sauce, , , once incorporated it makes a very creamy sauce.

Of course at the same time do the potatoes. Put the potato cubes in a pan with boiling water and they will take about 10 minutes to be cooked, once they are cooked and drained and mash them. In a milk pan put, a glass of milk warming up with a tablespoon full of butter, and once hot so that the butter is melted pour it into the mashed potatoes also adding the salt, ground black pepper, chopped chives and a of pinch of nutmeg, stir well dish it and put the slices of chicken on top and the sauce around. Don't forget the coriander leaves as these are not just decoration, eaten with the sauce gives it a special taste.

Caramelized Onions and Garlic Cheese Omelette

Who doesn't know how to make an omelette...the answer would be no one, as everyone knows how to make them, but the most important is the the contents (fillings) same as a person, as is what is inside a person that counts (their personality) same goes for the omelette, the fillings are it's personality, so make them good.

However simple it may be, this one is one of the best tasting omelettes I've made, and as such I wanted to share this with my followers. As to the potato wedges, there several recipes previously posted on how to make these, look in my previous postings or search for the keyword "wedges" in the labels.

Recipe Ingredients: (1 person)
  • 2 big eggs (mixed in a bowl)
  • 3 garlic cloves (minced)
  • 1/2 onion (thinly sliced)
  • 3 soup spoons full of cubed cheese (I used cheddar and cut it into very small cubes)
  • a little olive oil
  • salt and black pepper to taste.



Place a non stick frying pan on the stove with a little olive oil, temper it with sea salt and black pepper, once hot add the onion and garlic, always stirring let them go golden brown virtually caramelizing them, (both the garlic and the onion will get a specific sweetish taste, which is beautiful) at this stage remove them from the fire, and pour them inside the mixed eggs , and stir these well.

Put the frying pan back on the stove with a little of olive oil, and once hot pour in the mixture of eggs and onions, at the start stir it as if you were going to make scrambled eggs, but as soon as it starts to dry stop mixing, as to achieve a perfect omelette it must be (a little) moist inside. Leaving 2 centimetres from the edge on the pan, lay a line of cheese cubes across the middle of the omelette, and then with a teflon spatula fold one third of the omelette back into it's center and do the same from the oposite side, let it cook for 1-2 minutes and once that is achieved flip it over letting it cook for another 1-2 minutes, after this it is ready to serve and eat, when you cut the amelette in the middle should be moist and the cheese should ooze out yumyum!!


You can serve it with what to want, I made potato wedges, you can use salad, rice and/or any other combinations that you may like. Bon appetit.
These eggs that I used were given by a friend who has hens and liked my blog so the eggs are free range and organic (super fresh), my friend's name is Manuel. Today some friends also gave me a wonderful fish which I will cook soon, but for now I have more surprises for you coming soon. xx

Fungi and Quorn Cooked in a Butternut Squash Sauce & Carrot and Tomato Rice (Vegan-Vegetarian)

Recipe Ingredients: (enough for 4)
  • 1/2 Butternut Squash (very finely diced)
  • 1 small onion (very finely sliced)
  • 2 garlic cloves (very finely sliced)
  • 1 courgette (finely diced)
  • 300grs button mushrooms (whole)
  • 200grs Quorn pieces
  • 400grs rice
  • 2 large carrots
  • 1 tomato (skin removed to for rose, rest diced)
  • 1 soup spoon of tomato paste
  • 1/4 glass of water with a tea spoon of plain flour diluted
  • 1/2 tea spoon of paprica
  • 2 glugs of olive oil
Put a pan on the stove on high temp, cover the bottom of the pan with olive oil, then once hot add, half of the garlic half of the onion and the butternut, start stirring it and as it starts to stick and dry add a bit of water (vegetable stock is better) mix again letting it cook it will dry again pour a little more water. the process is repeated around 3 to four times until the butternut starts disintegrating into a paste, when that happens season it (salt and pepper) add about 1/2 glass of water (or veg stock) and now add the courgette, Quorn and the mushrooms, put a lid on and reduce flame to minimum, letting it simmer and cook for about 15 minutes.

While that is doing let's do the rice, put a pan with water and salt on the stove on high, then pour the rice in and give it a stir, it will take approx 10-12 minutes until fully cooked, once done strain it passing also boiling water through to remove starch then add the carrot sauce.

While the rice is boiling you put a frying pan on the stove, with a little olive oil and once hot add the carrot, remaining garlic and onion as well as some seasoning, stir fry it for about 3-5 minutes and add a little water (or veg stock) and then let it cook another 10 minutes and at this stage will join the rice.



With all taking the 15 minutes the sauce takes to be ready all will be ready at the same time, so remove the lid from the butternut sauce and add the water with flour this will thicken the sauce further making it extremely smooth and nice.

Plate it up and eat it, it has a delicate sweetish taste due to the butternut which is in my opinion quite divine. If you want a meat one just replace the Quorn with the meat of your choice.

Spring Onion and Parsley Macaroni Cheese

Recipe Ingredients: (enough for 4 people)
  • 400grs Macaroni pasta
  • 3 spring onions (chopped fine slices)
  • 3 garlic cloves (2 minced, 1 crushed)
  • 1 glass of milk
  • 50grs butter
  • 50grs cheddar cheese (grated)
  • 1 bunch parsley (chopped coarsely)
  • salt and black pepper (to taste)
  • 1/3 spoon of nutmeg (powder, or grate it yourself)
  • 1/3 of a glass with water and a heaped tea spoon of plain flour diluted in it
  • 1 glug of vegetable oil



This is an easy and delicious winter recipe, that I make all the time when I haven't got much time. not very healthy but is comforting and is definitely a filler.

Put a pan with some boiling water a glug of oil, 1 crushed garlic and a little salt, put the macaroni inside let it boil for 7-10 minutes, once cooked drain and pass through it some boiling water, and drain it again and put it in the sauce.

The sauce is made as follows, put the milk butter a little salt and pepper and the nutmeg in a little saucepan, take to the stove on a medium heat once it starts boiling add the spring onions, and the flour diluted in water, stir it and let it thicken, once it reaches that stage which will take around 2 minutes add the grated cheese and the parley, stir it again for another 1 minute, that will thicken some more. Now place the sauce in the large empty pan where you previously boiled the pasta, add the drained pasta to it, put a little on and let it rest about 2 minutes and serve. If you like a better effect and some crispiness, you may put it in a little pirex tray add a little grated cheese on top and dust also some oregano and goes in the oven 200c for around 10 minutes or under the grill till golden brown on top around 3-5 minutes, you decide...I couldn't wait so I ate it like that.

Continental Pork Meatballs & Cranberry Sauce Panini

This was an excellent sandwich I made, is a classic in some places but nothing like a home made one. With all home made.

Recipe ingredients:
  • Pork mince 300grs
  • 2 garlic clove minced
  • 1 hand full bread crumbs (I just grate old dried baguettes)
  • 1 egg
  • 1 tea spoon of smoked paprika
  • salt and pepper (to taste)
  • some fresh panini's (I used Morrison's, they great 5 for £1.00)
  • 150grms cranberry's
  • one soup spoon of sugar
  • a squeeze of lemon
  • some olive oil
In a bowl mix in the pork mince, the garlic, egg, paprika, salt and pepper (to taste), once is all very well mixed make little balls. put a frying pan on the stove with some oil once very hot add the meat balls and keep swirling occasionally until the balls are all sealed, to better retain flavour. Once that happens, let them cook about 3 minutes on each side, so 3 minutes and turn and three minutes more, take them out to a plate with some absorbent paper to takes excess fat.

On a little non stick milk pan or similar size put the cranberries a soup spoon of sugar and a soup spoon of water + a little lemon squeeze, cook them for four to five minutes then mash them with a masher and cook for a couple minutes more until is quite thick, but you don't want jam, so don't cook much longer than that if is still too liquid don't worry the bread will absorb some juice will just make it nicer. Cut the panini's in half (see picture) cut the balls in half fill the panini place some cranberry sauce on top and their ready to eat, this is a delicious and fast snack. really really nice with some latte. When you doing the cranberry sauce if you want to add some more mystery add a couple of thinly sliced mint leaves...yum yum !!! Hope you really enjoy this one.....

Lamb Fillet with Paprika Potatoes and Grilled Halloumi Cheese



Recipe Ingredients:

  • 10 Small potatoes with skin (cut into quarters)
  • 2 Garlic cloves (minced)
  • 6 sliced of halloumi cheese about 1/2cm thick
  • 1 Lamb fillet (about 300grs, marinated in salt, pepper, garlic and lemon juice..for 20-30mins)
  • 300grs mushrooms (cut into quarter, I used mixed brown and white for greater flavour)
  • 1 parsley bunch (finely chopped)
  • 1 soup spoon of butter
  • a little olive oil
  • 1 tea spoon of paprika
  • salt and pepper to taste
  • a little lemon juice



Place a pan with water and salt on the stove, once boiling add the quartered potatoes and let these cook until they are about 3 minutes from being fully cooked (is intentional that I am not giving you times as cooking times vary depending on potato quality and time, you should know the potatoes you use cooking times). Once that happens remove them from the stove and drain them and place them in a bowl, adding to them salt pepper a drizzle of olive oil 1 garlic minced and the paprika, toss the potatoes in the bowl (not using instrument, only by moving bowl as you want potatoes to remain whole), and once they are all covered you place these in a tray and in a pre-heated oven to 200c for about 25 minutes.

Now place a frying pan with a glug of olive oil on the stove and once very hot, place the lamb fillet within. The idea is to seal and brown off all the way around the fillet, once this is achieved you set the meat aside and let it rest, until there is only about 15 minutes till the potatoes are done, once that happens, place the fillet in a Pyrex and insert it in the oven as well.

Five minutes away from what is in the oven being cooked, place the same pan you used for the meat, on the stove add a little more olive oil, the butter , and the remaining garlic (minced) a little seasoning salt and pepper, and the mushrooms, as it get hot with the pan start tossing the mushroom, regularly until they are 1 minute away from fully cooked (as they take about 5 minutes in all) at this stage add the parsley turn the fire off and toss them a few times. And as you can see all is done at the same time.

While someone serves, you should have a hot griddle, and a little pepper and lemon drops over each halloumi cheese, the griddle must be non stick (don't have one use a non stick pan or frying pan) put a drizzle of olive oil and grill the cheese for about 1 &1/2 minute on each side, and then plate it ...see picture.

This meal also goes well, if you want to replace the meat , with for example home made fish cakes..you decide.. bom apetite!!!

Chilli con Quorn over Pasta Shells (vagetarian)

Very easy recipe that I do repeat several times during the month, as my wife is a vegetarian, and this turns out very similar to the meat one (my opinion) I also enjoy it too. The kids are not so keen, don't take me wrong they still like it but called it fake meat and say would prefer with real meat.

  • 2 red chillies (finely sliced) medium hot
  • 1/2 red pepper and 1/2 green pepper (diced)
  • 1 onion diced
  • 1 large carrot (thinly sliced)
  • 3 garlic cloves (minced)
  • 1 soup spoon tomato concentrate
  • 1 tin of tomatoes (diced) can also use fresh ones but de-seed them and remove the skin first about 3 large will do (diced)
  • 1 tin mixed beans (or just kidney beans will do)
  • salt and pepper to taste
  • 1 tea spoon full of cumin powder
  • 300grs of Quorn (or alternatively soya mince)
  • 400grs of pasta shells (cooked in water with two crushed garlic cloves)
  • 1/2 glass of white wine
  • 4 soup spoons of olive oil



Well this recipe is very simple, place the oil in pan and once very hot add the following: Onion, Garlic, chilly, peppers, carrots, cumin powder, salt and black pepper (to taste), let it all cook stirring occasionally until the onion is semi transparent, at this stage add the tomato, the tomato concentrate and the wine, reduce to medium heat and let it simmer for 5 minutes.

Now add the Quorn or Soya and let it continue to simmer stirring occasionally for a further 5 minutes, at the of which you add the beans and let it continue to simmer for a further 3-5 minutes more and the sauce is ready. So remember to put the pasta on cooking around the time you added the Quorn to the sauce.

Once all is ready place the pasta on the plate (you can also do this with rice or Bulgar or even cus cus) and pour a good couple of serving spoons over the pasta, (optionally) you can add some grated cheddar and a little Parmesan on top. makes it just delicious, of course is also good without it. For a meat one just replace the Quorn with beef or pork or lamb mince.

Tip: for fairly hot use the whole chillies sliced, if less heat is required just cat the chillies in half and remove the seeds and the white veins, before cooking them.

Pan Fried Chicken Fillets w/ Butter Sauce and Spring Onions



Recipe Ingredients:

  • 400grs chicken boneless and skinless mini fillets
  • the juice of 1/2 lemon
  • 1 garlic clove
  • 1/3 glass white wine
  • 400grs spaghetti (100% durum wheat)
  • 3 spring onions sliced
  • 1/3 glass milk
  • 2 soup spoons of butter
  • salt and black pepper to taste
  • a little olive oil
  • 1 heaped tea spoon of plain flour dissolve in water
Way easy and quick, and very...very cheap. Boil the spaghetti as normal it will take about 12 minutes to be cooked.

While that is doing, put a large frying pan on the stove on high temp, add a couple of glugs of oil, and once hot add the chicken fillets (previously seasoned with garlic, the lemon juice, salt and pepper and left to marinade for 1/2 hour).

They'll immediately start to sizzle, and therefore require turning around fairly quickly to seal the meat (the reason why is important to seal is that the meat becomes this way more juicy and moist as if the outside is sealed the moisture and juices inside will escape at a much slower pace), once sealed cook well on both sides until it goes a golden colour (see photo) once that happens on both sides it is done remove them and let them rest only time enough to make the sauce.

For which you deglaze the pan, which means you pull out the stuck to the pan chicken stock by pouring the wine in and rubbing it around with a wooden spoon, which will make the wine go a brownish colour, at this stage add the butter and as soon as it all melts add the milk and the dissolved flour, this will thicken the butter cream, ready to pour over the edges of the pasta and chicken (see photo) finally you put the sliced spring onions over the edges of the pasta and chicken, this is not only a good garnish it also provides an excellent flavour and texture once mixed in with the sauce, pasta and meat while eating. bon apetit...

Meat Balls in a Creamy Coriander Sauce and Oven Fries ( better than Ikea's)

This one was inspired in the Ikea's Swedish Meatballs.



Recipe Ingredients:

  • 400grs beef (minced)
  • 2 garlic cloves (minced)
  • 1 handful of breadcrumbs (you can use old dried brad just grate it)
  • 1 whole egg
  • half a tumbler glass of cream
  • half a tumbler glass of whole milk
  • 1 stock cube of chicken (I used Oxo easier to dilute)
  • 1 large onion (halved and sliced)
  • 1 little bunch of coriander
  • 1 little bunch of parsley
  • 8 medium potatoes (pealed and chipped)
  • some olive oil
  • salt and pepper to taste
  • 1 soup spoon of gravy (don't worry if you do not have it as some plain flour and water will do)



Throw the chipped potatoes in a pan with water, and par-cook the chips, then place them in a tray and brush them with olive oil and cook them at 200c, occasionally turning them around.

While that is doing, put the minced meat in a bowl, and put there also the parsley finely chopped,, 1 minced garlic clove, a pinch of black pepper and a pinch of salt, the bread crumbs and the egg. With your hands mix it all very well and shape pieces of the meat into balls, and set these aside.

now put a pan on the stove (on high) and pour in a couple of olive oil glugs, once very hot add the sliced onions, and the remaining garlic clove (minced) cook until the onions start to go semitransparent, at this stage add the meat balls and occasionally shake the pan so that the balls turn over and seal.

Once sealed add the gravy and chicken stock cube mixed in a glass of water also adding the cream and the milk, (if still to thick add more milk, if too thin a little more gravy diluted in a little water) + a pinch of salt and a pinch of black pepper to taste. And about one minute from finishing cooking add the chopped coriander. Is as easy as that, with the chips now ready is just serve and eat... (notice I didn't say how long the chips take, this is because it varies from oven to oven from potato quality to potato quality and even for how long they've been parboiled) But roughly about 20-25 minutes.

Roasted Pork Loin with Loaded Goats Cheese and Dill Skins

This is definitley a treat for all my followers and visitors.




Ahhh!! Dill and (French) Goats Cheese, as soon as I saw this I had to use it, especially in view that the previous day I had roasted a pork joint to eat today and I still didn't know what to do as an accompaniment so I decided for loaded skins, but I didn't want to do the traditional Bacon and cheese, as everyone normally does that.

So this is really two recipes, one short and longer, the pork joint no recipe is needed. As for that all you need is a pork joint from any main supermarket and you unfold it and rub in and on it a
paste made of: (a bunch) coriander + garlic (2 cloves) + sea salt (1 soup spoon) + ground black pepper (1 tea spoon) + chili powder (1/3 tea spoon) + a little olive oil.



After that is done let it marinate for at least 30 minutes, then stick it in a preheated oven to 130c for about 1 hour, remember should be in a small container as the juices will further help it cook, also slow cooking is imperative as this will leave meat more tender.
After initial cooking I left the meat rest from one day to the other, and then blasted it for 15-20 on a 200c oven the crackling goes very crispy as you want it to be, so prior to cooking diamond scoring is important too. See picture bellow.



The potatoes now they were just outta this world, and I am not one to brag, actually I invited my sister for dinner and she normally eats very little but not this time.



Recipe Ingredients:
  • 150-200grs of "French" Goats cheese
  • 1/2 glass of cream
  • 1/2 glass of milk
  • 2 soup spoons of butter
  • 1 bunch of dill
  • about 1kg of potatoes (red)
  • salt and pepper to taste
Roast the potatoes it will take about 1 hours 200c, once done cut the potatoes in halves with a spoon scoop the potato interior from each half into a bowl, leaving virtually just the skin.

Mash the potato with a masher and throw in the goats cheese in bits and the butter also seasoning (salt and black pepper to taste), give it a stir the goats cheese should melt as the potato is hot and will start going very thick now throw in the rest, the dill, the milk and the cream (double is best) and stir it all very well.



Spoon the mixture back into each potato and on the top sprinkle a little more salt and freshly ground black pepper, put it back in the oven for 15 minutes more 200c and it is done.
See, when you put the potatoes in for the 15 minutes it is at this time that you can reheat and cook the crackling of the pork as previously mentioned, as this way both things are ready at the same time. DELICIOUS really is.
You will notice I also cooked some halves, corn-on-the-cob with a little melted butter on top they were great too.

Charlotte Pomodoro Spaguetti + Garlic Granary Bread




This is a very simple recipe that I've made just after Xmas, as my birthday is the day after and I could not be bothered to do anything more complex.
It is a Charlotte Spaghetti Pomodoro with granary white Garlic Bread, simple yet delicious recipe.

Recipe Ingredients:

  • 8 Charlotte onions (finely diced)
  • 4 garlic cloves (minced)
  • 2 glugs of olive oil
  • 4 soup spoons of butter
  • 1 tea spoon of dried oregano
  • 1 can of rich plum tomatoes (chopped)
  • 1 full soup spoon of tomato paste
  • 2 white baguette with granary (other baguette will do, sliced diagonally)
  • 400grs pasta 100% durum wheat
Put some water boiling with some salt and a little veg oil (veg oil is used so that when you cooking pasta the water doesn't foam up), stick the 400grs of spaghetti in the water and cook for about 10-15 minutes, you want the pasta cooked "al dente" which means cooked but still fairly firm.

While this is doing put a wok or frying pan on the stove pour the oil inside and once very hot add the chopped Charlottes + half of the garlic. Let this cook stirring occasionally until very golden brown, at that stage add the tomato (both the can and the paste) + half of the oregano and one spoon of butter, this should now cook for approx 10 minutes.

While that is doing in a ramikin mix the remaining butter + garlic and oregano, mix this until an omogeneous paste is achieved butter the sliced baguette on both sides and put this in a preheated to 200c oven cook for about 5-7 minutes.

then is just a matter of assembling it all in the plate, see picture...I also added some parmesano greated cheese on top.

I will try to respond to all comments made, and visit their owners, however I run a no strings attached blog here when I comment on other blogs I do not expect to have them come here the same way I don't accept if I am commented on that the person will expect my visit to their blog, no commitments, but as I said I will try.
